Step 1:
Prepare Your PS5 Start by accessing the settings menu on your PS5 and navigate to network settings. Uncheck the option to connect to the internet for now. Next, go to the system software and system updates section and make sure to disable automatic downloading and installation of update files. Verify that your system software version is jailbreakable by checking the firmware version against the list provided in this article.
Step 2:
Set Up the ESP Chip Connect your ESP8266 or ESP32 chip to your computer using a USB cable. The device manager on your computer should detect the chip and assign it a COM port. Select the ESP chip’s Wi-Fi network, labeled as “ps5 web access point,” and use the default password, “password.” Once connected, open the user guide page, which will redirect you to the web server hosting the jailbreak exploit. Allow the security certificate and proceed to the jailbreak site.
Step 4:
Jailbreak the PS5 On the jailbreak site, download the offline cache to enhance loading speeds. This cache allows you to access the jailbreak site even if the ESP chip is not working or the Wi-Fi network is unavailable. Refresh the page and click the “Jailbreak” button to initiate the jailbreaking process. Note that the jailbreak may crash upon loading, but persistence and multiple attempts should eventually lead to a successful jailbreak. Once jailbroken, you can explore different payloads and functionalities.
Step 5: Optimize the Jailbreak Experience Access the debug settings on your PS5 and install the ESP Host package for easy access to the jailbreak site. Additionally, installing the ESP Host Media package can be convenient for quick and direct access to the exploit site from the media section. These packages can be installed through the Package Installer in the debug settings.

I think you can disable internet and factory reset your PS5, but chose the option to reinstall PS5 software from USB. Take a USB to a PC and download an earlier firmware version. And when you reinstall PS5 software, it will reinstall it from the USB with previous firmware. Now you can jailbreak it.
