    Really enjoyed this. Just a note - the reason people don’t put vinegar in their sauerkraut is because it kills off the probiotics (good bacteria). Fine to use if you just want the flavour but if you’re making for gut health then leave out the vinegar x

      i read an article in an old fashioned magazine that argued that! the guy said a small splash of vinegar will not only help keep the kraut and yield a better flavour but the small amount of vinegar present will help us use the good bacteria in the kraut BETTER than without it! i do it both ways tho, depending on how i feel 😂

      I don’t think a splash of vinegar would kill off the bacteria. From my understanding it would be high heat/pasteurisation that would kill the bacteria e.g sauerkraut on the shelves at the supermarket

    For the peppers I would suggest if you’re open to it cutting off the top part of the pepper that you are discarding anyway and coring it from the hole that’s now made and rinsing it to get rid of any seeds then you can just slice it up real quick :) hope that’s helpful and makes sense!

      This is a great idea except for when you’re using the mandolin, because you need to hold onto the top with the stem to slice it.

    Hi Sarah! Thank you for this beautiful video! One thing I have recently learned is that adding tannins will help vegetables to stay crisp while fermenting or pickling. Grape leaves, Bay leaves and even tea leaves can help! :) Keep these lovely videos coming, they are wonderful.

    I don’t know if you do this but I roll out my dill with a jar or something it helps release a whole lot of flavor if you like the taste a dill I recommend! Loved this video! ❤

    I like traditional canning because I like to keep things in my pantry for a longer time. I like that you added dill. Dill keeps the cucumbers crunchy.

    Love how your garlic helped your infection!! I do fermented garlic in honey. Same thing though, it’s like an antibiotic on its own. I learned a while back that garlic is so strong at repelling bacteria and germs, soldiers in days of old used to eat raw garlic on the battlefield when they couldn’t get access to antibiotics! Also, if you have garlic breath, you are literally repelling germs that come near your mouth. 😅 garlic is amazing!!

    You really do inspire me so much, Sarah, to be in the kitchen more! I usually hate cooking of any kind, but lately I’ve learned how to do this quick method of canning and I’ve made two batches of homemade pickles! They are soooooo good! I added lots of yummy flavors to mine like minced garlic, dill, mustard seeds, bay leaf, and hot pepper flakes along with white vinegar and it was sooooooooooo good! I don’t have very many cucumbers left in my garden but I definitely want to keep doing this! As always, thanks for your amazing content! 🤍

    Started canning in the refrigerator recently and enjoyed it so much before tried pickling at room temperature, and it just didn't work out very well. Tried pickling red onions and pickles in the refrigerator, and was sold since the taste and crispiness were just so great.

    I’m not a mom but I’ve been trying to make more things from scratch so this video was perfectly timed! Also so happy that you blurred your kids faces - so many content creators that have kids don’t or use them as a primary source of their content and it’s such a huge privacy infringement for the small humans that can’t consent to it yet ❤

    If you pour boiling water over the salt and sweetener in the quart jar, you don’t need to dissolve in a pan. Extra vinegar will extend the life of the refrigerator pickles to 7 months in my experience.

    Try fermented beetroot juice since you enjoy fermented and very healthy foods 😎
    Pick nice beetroots, peel, wash, slice (rather thick), to a clean jar add first the cloves of garlic (the more the merrier), bay leaves, allspice corns, black pepper corns, then the beetroot. Pour with completely cooled brine (1tbls of salt for a litre of boiling water). If the brine isn't cooled enough, the juice will not have a beautiful purple colour but muddy brown (doesn't change the health benefits or taste) Make sure nothing rises to the surface/floats on top - you can weigh it down the way you did with sauerkraut but skip the foil. Close the jar. Ready in about a week, two tops. Will bubble, so keep an eye out on mold, you can always take the foam off the top to make sure you don't have mold. Extra tip: you can put the spices in a piece of gauze, so that they don't float around.
    Take a tablespoon a day, to see how your belly tolerates it, then up to a glass a day. For the kiddos - a teaspoon daily, so they can get used to the flavour. Then a tablespoon or 1/4 of a cup.

      Looks like this would take most of the day, including doing all the normal meals and cooking. They both stay home so Dad will be watching the kids, I can’t leave my little one for more than 5 minutes 😂

    I’m not sure it’s safe to add vinegar to the sauerkraut before fermenting. Might want to research that.
    Also, fermenting things like garlic and hot peppers is amazing! Easier than the fridge pickles. It takes several days but you only need water and salt. They end up tasting pickled. You can add whatever spices you like.

    It's way healthier and testier to do pickeled cucumbers just with water and salt (! spoon of salt for 1liter of water). Then you have oney good bakeries, with no vinegar who can actually iritate your stomach and cause acne :) that's how they do it in my country. Also you can do it in a way it keeps good for months even years.

    other info you may find interesting - real, organic honey never stays in liquid form for long period - it crystalize naturally. So if you have a liquid honey in a squeezable bootle- it is probably mixed with normal sugar (unfortunately producers do it regularly - especially big ones, from markets). I suggest you to find a local honey procuder and check the quality of the honey by seeing when does it cristilize. Otherwise it is just melted sugar you give yo your children.

    Does pickling pickles and fermented pickels taste different? I like the sour and vinegar taste of store bought pickels. I just don't want to have food waste if i end up hating them

I know that you're not currently pregnant, but I'd love to hear how you've managed homemaking tasks like these through pregnancies (specifically morning sickness; I'm currently in the thick of it with my fifth baby) and postpartum.       @@sarahp3144 I have never struggled as much as this time to take care of the home, simply because I have four other children, all 6yo and under. The home is pretty much chaos, and I've resorted to canned soups, frozen chicken nuggets, and whatever other convenience food I can justify during this time. I cannot wait to be past this phase and able to really work in the kitchen. I even had to trash my sourdough starter because just seeing and thinking about it made me puke! 🥺 I hope that your first trimester isn't as rough as mine has been! Congratulations on #3!

    You are using a method called refrigerator preservation not refrigerator canning: canning requires a canned.
