This tracks with my experience with the Gozney Arc XL. We had a party and ended up doing about 12-14 pizzas. We were prepared to do them in a row with no break because we essentially had an assembly line going, but we did end up giving the Arc XL a break probably two or three times for a couple minutes to let the stone reheat. The ambient temperature remained high enough. The cook time for the bottom was slowly increasing after each pizza until we let it reheat. I’ll say the bigger challenge was preparing that much Neapolitan dough though. We made 18 dough balls, which was too much for our KitchenAid stand mixer, so we didn’t really develop the gluten enough in the dough. Made it very difficult to stretch without tearing.

I come them all the exact same amount of time. Every single one was a minute and a half. When I do other tests with cheese at that same temp they take a minute and a half .

I could have saved $400 by going with the Roccbox and still make great pies but for my first oven $809 for the Arc XL is the way. Interesting tests!
