Noel, if you are all about no waste for food....save all those onion ends and any other veggie pieces in a bag in the freezer. (carrot tops, celery tops & leaves, bell pepper veins, etc) Once full boil them all and make homemade veggie stock or add them to chicken or beef bones to flavor those stocks. You can freeze the stocks in 1 cup rations for later use if wanted. Its a great way to get "everything" out of your veggies.
@ghosttownbmw yes, when sick, a hot stock/broth works wonders. It's good for veggie soups if you want to keep them 100% veggie. A lot of people like chicken or beef stock just to add flavor without actually adding meat. I also use it instead of plain water for cooking rice.
Some tips if you want to reduce the risk of curdling - Use the lemon zest to season the chicken and sauce instead of lemon juice. You can then add the lemon juice towards the end after you have finished cooking/plating to get more out of the lemon and help reduce the salt required. Hope this helps!
I made this, and I did the thing. You know what you mentioned with the lemon and the chicken, and the curdling. And threw all of it out. I will simply avoid putting in lemon till possibly the end. I added the cream while the pan was too hot. But when I made that sauce in the blender.....absolutely beautiful. I was always wondering how to make a creamy sauce with out making it a complete calorie bomb. Danke!
In addition, just heating the sauce in the pan too much will also break the emulsion (split the sauce/curdle). What you could do is just keep sauce separate from chicken/pasta. Reheat chicken pasta in the microwave and add the sauce cold right before eating. Mix it up and the temps will equalize
Hey Noel, Thank you for this recipe! A little tip: When you make pasta, add like half a glass of the pasta water, the starch will keep the consistency intact but it will make the sauce creamier!
second this! it will also make the sauce stick a lot better to the pasta and be less clumpy. Add a little pasta water at a time though cause you cant further reduce the pasta (cause of the curdling) if you add too much which can cause it to become too watery

I love these videos! The nutrition side of things is admittedly the thing I tend to trip up on the most, although the gym may not always be "easy" it is relatively simple. When eating large quantities of food it's key to keep it tasty, it doesn't have to tast like cardboard.

Thanks for the great recipe, One thing I might point out is that you cut a flat part on the onion when you cut the top off. Set that part down on the board and slice down through the top of the root. You have a stead thing to cut and you will keep all your fingers.

Quick tip, you don't need to cut the onion in the middle, onions already have natural curved horizontal cuts
