    Its not necessarily a holiday treat, When I was a kid, before you were born, venders would push a Cart with Pizzelli and Chi Chi's, baked Garbanzo beans. The vender would stop at this corner and he had a little steam whistle he would blow to let people know he was there. it was a great treat, This was in Chicago in the old Italian Neighborhood, were my Grandmother lived. Nice job Joe.

    My mom made Pizzelle when we were kids. My father’s Italian so either he or my grandmom taught my mom how to make them. My mom had an unusual way of frying them, using a pizzelle dipping iron, that would release the cookie dough into the hot oil. It worked beautifully! I must try them your way! Thanks for the recipe and great memory!

      ingredients
      3 large eggs
      3/4 cup sugar
      1 stick unsalted butter, melted and cooled
      1 tablespoon pure vanilla extract
      1 3/4 cups all-purpose flour, sifted
      2 teaspoons baking powder
      2-4 Tablespoons of milk depending on how thick the batter is
      instructions
      Beat eggs and sugar in a mixing bowl approximately 2 to 3 minutes, until they're fluffy and a light yellow color.
      While still beating, slowly drizzle in the melted and cooled butter. Then add the vanilla extract.
      In a separate bowl, whisk the baking powder into the flour. Using a spatula, fold the dry ingredients into the wet ingredients until just incorporated.
      Bake in pizzelle maker until golden brown, about 30 seconds. Remove with a wooden spatula to a cooling rack.

    They look delicious, thank you. My favorite store bought cookie is Trader Joe's Belgian Butter Waffle Cookie. What's the difference between pizzelles and the Belgian version? Best regards.

      The thickness is the biggest difference in what you would see. The taste is very different as the Pizzelle is light and airy and eggy with a flavored oil. Thank you for watching and subscribing. Joe

    I make a white vanilla mousse, mixed with extra whipped heavy cream so it spreads easily, and I make sandwiches with them with powdered sugar on top. Also great with nutella. Just love these cookies!

    Joe, i just found you on TH-cam and I have to say I love the show. Question on the flour? I know you said you were using AP flour, but then said pastry flour. Should I add a little corn starch to the flour to bring down the gluten level or is straight up AP flour good to go. My 4 year old daughter and I are going to be cooking these up today. Again super addictive channel you have.

      +cilly77c Pastry is better as the protein count is the lowest and the fine milling offers a lighter texture for sure. AP flour always works but the pasty in this recipe is the best to use if and when possible. Thank you for watching and please subscribe. Joe

      @@Cookingitalianwithjoe Late but might help others reading it now. If you can't find pastry flour use a soft wheat flour brand such as White Lily which is better for things like biscuits and cakes. Harder wheat flour like King Arthur is better for breads.

    Hi Joe, I don't have a pizzele iron or maker...can I use a waffle maker?

      +Diane G Rosolen Waffle iron can be used but the pizzele will be too thick. Use a crepe pan and that is better as they will be thin and perfect, but with no design. Just use more sugar to hide it! lol Thank you for watching and your comments. Please subscribe to our

    I see you have a stainless steel pizzelle iron; I do too. It was my mom's and she bought it many years ago at an Italian specialty shop. The non-stick teflon coating on those sold today are terrible! The cookies come out too thick/not crisp.

      You are right, my old maker makes thin pizelles and now the new one makes them thick. Even though it is non stick, they are thicker than my old machine. I was disappointed in the new maker....thanks

      My sister got me the Chef’s Choice iron from Sur La Table and it makes them crispy. Take about 10 seconds from flexible to “ snap “😃

    so what did I do wrong. I added the batter, waited 30 seconds and it stuck to the insides lol... did I not let it heat up long enough? I seen that you gave it a quick spray of olive oil. do you do that for each and everyone? what a mess now I'm trying to clean this up

    It needs a jigger og brandy vanilla.I like fresh vanilla beans with a jigger of brandy. Apricot brandy would be nice with the Pizzelle mix.

    For some reason, my pizzelles turned out really dry. Should I add more butter? Also, every store was out of anise, so I ground up seed and added that. Not sure I added enough, though.

      We don't like anise so try using almond extract along with the vanilla.
