Fuchsia is very knowledgeable with the Chinese cooking culture. Excellent. She deserves a lot of accolade for her work.

Such lovely lady. Just look at her life, full of colours, happiness and forever rewarding life experiences. When one is open minded, non judgemental and respectful of other cultures, You get so so much more back. Maybe more people in America can be more open minded one day soon...

I occasionally cook the kidney dish and have been cutting the kidney the way Fuschia describes . I learnt to do this through watching my mother preparing it for stir fry during my childhood days. I am delighted to discover the reasons behind this technique . It is ‘mystery is now solved. ❤

to a chinese person, the cleaver is essential. French chef knife is ok, but it's less versatile than chinese cleaver. The kidney dish is one of my favorite growing up.

This is a great conversation between two true experts. Thanks for sharing it with us. Can you please give a full citation (and maybe even a link) for the english language translation the taoist text you quoted during the conversation? Thanks!

www2.hawaii.edu/~freeman/courses/phil394/Zhuangzi.pdf This is a link to one of the various translations. I believe the passage Fuschia is referencing is chapter 3 (p. 8) :)
