Find a balance between hot enough to make it crispy, but not too hot to burn it. Don't move it while it's cooking. Add your toppings to the batter as they cook, and add more oil as needed. Cook until golden brown. They should turn out crispy on the outside and chewy on the inside. Cool on a cooling rack. Enjoy warm. *Nam-poon-sai is pickling lime (not the citrus fruit!!). Safe to use in small amounts. The chemical compound is Calcium Hydroxide. You mix a very small amount with some water, let the powder settle to the bottom, and use the water only. This is used to make food crispy.
