FULL MODIFIED RECIPE
Ingredients:
To make sweet potato crust
6 cups of sweet potatoes cut into cubes
2 cups of oat flour
Garlic be powder, Italian seasoning, crushed red pepper and salt to taste
Toppings for the pizza
Vegan mozzarella cheese
Pizza sauce
8 oz mushrooms
1/2 cup of sun dried tomatoes
1 bell pepper
1/2 block of tofu
2 cups of spinach
1 onion
5 cloves of garlic
To create sauce
1 cup of tomato sauce( 15 oz)
All water sun dried tomatoes were soaked in
2 tbsp of almond flour
1 tbsp of nutritional yeast
Lemon and pepper seasoning, cinnamon, smoked paprika and garlic powder to taste
Directions:
To make crust
Steamed your sweet potatoes for 20-30 minutes.
Combine all the ingredients to create dough.
Divide your dough into 2 halves and use 2 round pans to shape your crust. The crust is little sticky - it is normal.
Place your crust in the oven at 400F for 20-30 minutes. Cool down your crust before adding sauce and toppings with it.
To make tomato sauce.
Add all the ingredients in a pan and boiled until all ingredients are combined. The sauce should be thick!
For topping
Cut garlic and onions into a small pieces.
Cut pepper into strips.
Place your mushrooms in a baking pan and sauté until water evaporates from them( you want them to be dry not to make your crust soggy!
Soak sun dried tomatoes in warm water for 10 minutes. Drain the water from tomatoes but do not discard it( you will need it to add with your sauce).
Sauté tofu previously cut into cubes in a little bit of watet( do not add oil). Instead you will add the water in which you steamed your sweet potatoes.
Made mixture of tofu, onion, sun dried tomatoes, garlic and bell pepper.
When your ingredients are ready, spread tomato sauce over your pizza crusts. Afterwards, add spinach, mushrooms, onion mixture and finally cheese.
Place at 350 F and bake for 10-15 minutes.

Carrots were my last two babies' favorite also. When they got to be quite old and had few teeth I grated baby carrots for them with a paring knife so it was easier for them to eat. They used to get sooo excited when they smelled the carrots being grated. 🙂 Give your babies hugs from me.
