It's serendipitous that this video popped into my feed today! I have a 1/4 ham in my bits & bites bin and I was just thinking this morning that I should try making a quiche with a bunch of it! I'm just cooking for one, so it's hard to use up much ham in one go. A mini quiche will let me use a good cup of it. I love sweet potato fries and feel the same way about them being healthier than plain fries.

Looks so yummy. I make a quiche like that and sometimes add leftover broccoli or corn. The yummy ham is key.

Looks yummy ! That ham would make some good senat bean soup and cornbread. Thank you ! ❄️☃️❄️

I love all the simple easy recipe ideas. I thought it being Jan I would have lots of time for preparing meals…not so. Not sure what is wrong but lately I've been doing a lot of easy meals too!

I think January is so busy just trying to get back into a good (maybe new!) routine!

I make mock quiche without the pie crust . It is a clean out the fridge recipe and I love it !
I keep cooked veggies and meat in my fridge so I can assemble quick and healthy meals for times I do not want to cook a full meal. Pork is one meat that is not over priced. I often find packages of pork on manager's specials and save alot of money.

I had one store boughten pie crust, apples, butter, cinnamon, and it turned out like a large apple turnover. Put the apples inside the shell, folded it over like a turnover, and sealed it. When it finished baking, I cut slits in the top of it. Put butter, cinnamon and sugar in top of it🥧. So good.

These all look tasty. But I would always add one side of colorful vegetables. That was my mom’s thing. My brother’s wife would cook a meal and he would come to the table asking,”Where’s the green?” Lol

Oh I know!! I felt bad for not having a green veggie on the pork chop meal! My mom had the same rule and I hate to break it!!!!!

@@homemadesimplewithlori. I saw one woman use a can of sauerkraut in her sausage $5 meal. That might work. I have to add a bit if brown sugar and caraway seeds from my pantry to cut the acidity!

The longer jalapenos cook in the oven, the milder they become. If you don't like the spicy heat, discard every last seed and the white membrane. Open a window and run the peppers under the faucet while prepping them - yowzers! Psst, let your husband prep them, LOL. Hmm, wonder if freezing them first would help things? IMO, the pain is worth it. Let them bake until every bit of the peppers turn a dark green and are very soft as that cuts way down on the hotness.
When making your own poppers, mix in whatever you might have on hand like cheeses, ground nuts, dried diced cranberries or raisins, onions, a touch of any mustard, maybe corn, whatever seasoning and chopped bacon rather than whole bacon to save on the price. Microwave the mixture a minute and stir in mayo to make it easier to spread into the peppers with a regular eating teaspoon.

The uglier it looks the better it tastes, that’s what we say in my family.

I do like a good bone-in pork chop. Yummy!
