Tip for easy and fast caramel :- after placing the pan with sugar and some water ( less than 60 ml or 1/4 cup water , some recipes don’t want water ) on low flame , don’t touch sugar with the spatula. Let it caramelise itself . It will happen faster than shown in this video . Don’t touch the sugar with anything that’s the key to the great caramel. When it fully becomes golden brown immediately off the flame and add the cream , at the same time stir continues and then add butter . don’t let it burn , always keep in low flame ( when the golden colour starts to spread almost all area, you can shake the pan gently to get the heat on all area if any white granules are still there ) after all granules are melted and golden brown you can use the spatula , other wise don’t use . You’ll feel the urge to use the spatula for the first time. Trust me it is more fast and easier than sautéing with spatula
