I think part of the reason for the Flamenco guitar is that while the scenario is about a military setting - the people in it are a mercenary group with a lot of personality and so this was a way to evoke the sense of "they're military, but something more, too"

Space railgun, planes with lasers, AI-driven fighter jets, destroying a gigantic building to prevent worldwide disaster, fairy tales, corniest dialogues of the 21st century, but on the other side, politics and military, war and tragedy, and actual people in-between those madness. It's a game about shooting down targets, but there's more that's happening on the ground and in the background, intertwining into an experience you can hardly ever get from any other game in the same genre.

So fun fact this soundtrack theme's lyrics and motif are borrowed from the previous game in the series, but was reimagined for this game. That's because Ace Combat Zero is a direct prequel to Ace Combat 5 and almost blend together into one story. So they used the main theme from AC5 as the basis for Zero. So if you wanna here the track that helped inspire zero, look up "Unsung War" from Ace Combat 5
It's an awesome magic trick you do, being able to hear the music for the first time and find all the little hidden technical gems. Ace Combat holds a special place for me, especially Zero, and it's great to see you get so passionate about it. I know I'm very bias, but I think you'd enjoy a lot of the in-game music for all the different Ace Combat games

If it helps at all, there's a heavy influence of the Arthurlan legend in this game. There's a superweapon called Excalibur, an area called the Round Table where fighter pilots duke it out with no regard to rank, the final mission involves an attack on Avalon dam, and last but not least the final boss plane is code named the Morgan.
There's also the factor the characters who are fighting in the joust are also two friends, one used to be the wingman of the other, so they were practically sworn brothers I believe the spiritual part means to repreent the sorrow of fighting one you once considered your brother, and then the flamenco part kicks in with resolve and determination, like clear minded focus on the fight.
Ah my favorite ace combat song in all the decades of it's history, I'm not sure if you care for the marriage of visuals in game music but, you should watch the trailer for Ace Combat Zero, they use this piece and its very nice.
The Tiberian Sons made an awesome cover of this song (though they used synth choir, which isn't _bad_ but it hurts my purist soul give the importance of the lyrics) and, even though I'm sure you had no idea, I appreciate you choosing footage of flying the "mascot" F-15C in the fight against Pixy. Theirs used a desert camo SU-37 and it feels weird.

The reason for the Spanish Guitar and Flamenco was actually explained by the narrative director during the 25th anniversary orchestra concert. Basically, for AC0 they wanted to tell a more personal story from the previous game AC5. Zero’s story would be focused more on the aerial battles and encounters instead of a grand blockbuster-esque story like 5. With it being a more personal story, they felt that the Spanish Guitar was the best fit for the game, and so here we are. While the AC world’s equivalent to Spain (Sapin) is present in AC0, they play a very minor role.
The end of this game actually made me tear up. It's not every day that the final boss of the game is a True Equal you respect, and who respects you as well. And no, this does not take place in Sapin (which is the Spain equivalent in game, yes it's just Spain with two letters switched), and I am not sure myself why there is such am emphasis on the spanish guitars. Personally, I'm explaining it to myself by imagening Cipher (your player character) is from Sapin. Foreign Mercenary, after all. Also, the mix of sad, tense but also happy chords makes me sad now...
