  • ONE Pot Tex Mex Shepherd's Pie - - Glen And Friends Cooking
    Ok, Ok, Ok... for our Commonwealth cousins, yes, strictly speaking this is a South West Cottage Pie recipe, or a Tex Mex Cottage pie recipe - because it's made with beef and not lamb. But around here everyone just calls it a Shepherd's Pie recipe no matter what meat is used. Being Canadian though, I'm just as likely (more likely) to call it Pâté Chinois - so this is my take on a Tex Mex Pâté Chinois.
    Ingredients:
    3-4 potatoes, boiled and mashed
    30 mL (2 Tbsp) oil
    1 yellow onion, chopped
    1 bell pepper, chopped
    4 cloves garlic, crushed
    1 jalapeño, sliced
    500g (1 lb) ground beef
    15 mL (1 Tbsp) chopped chipotle in adobo
    30 mL (2 Tbsp) taco seasoning
    250 mL (1 cup) frozen corn kernels
    1 (540 mL) can black beans, drained
    1 (540 mL) can pinto beans, drained
    1 (284 mL) can Ro-Tel
    1 (127 mL) can chopped green chiles
    60 mL (¼ cup) sour cream
    15 mL (1 Tbsp) Marmite
    Handful grated cheddar cheese
    Directions:
    Preheat oven to 180ºC (350°F).
    Boil and mash some potatoes with salt, pepper, butter and milk / cream.
    Heat vegetable oil in a large oven proof pan over medium heat.
    Add onion and cook until softened and translucent.
    Add bell pepper, jalapeño, garlic; cook until softened.
    Add beef and break apart with a spoon; cook until brown.
    Stir in taco seasoning, and chipotle.Add corn, black beans, pinto beans, Ro-Tel, green chiles, sour cream, and Marmite.Stir well together and then top with mashed potatoes.
    Bake for 30 - 45 minutes.
    Sprinkle grated cheddar cheese over top, and bake until melted.

    In UK we use "shepherd's pie" when made with lamb mince. (I presume they have access to sheep!)
    When beef mince is used we call it "cottage pie".
    But i am sure you can call it whatever you like, especially when ti sounds this good.

      No we don't have access to sheep or lamb mince in my area of the U.S. Just started seeing Bison more at the market. Beef, pork, chicken and turkey are the mainstays.

      Ground lamb -- or any other form of lamb -- is actually pretty hard to come by in a lot of the US. I live in an area with large Muslim & Jewish populations and there still isn't much lamb sold in the regular grocery stores; it's only reliably stocked at the halal and kosher markets.

      Here in the U. S. minced lamb is relatively uncommon though Aldi stores sporadically have it. Almost everyone calls the beef dish shepherd’s pie rather than cottage pie. (Another Americanism but one new to me: anything resembling a flavored mayonnaise is called aioli, and aioli is called garlic aioli.)

      My Mum always made Shepherd’s pie by mincing leftover lamb from Sunday dinner. Quick dinner on a Monday (washday). That makes me sound old

    As a Texan, I approve of this recipe. I’ve always made something similar with jalapeno cornbread on top instead of mashed potatoes.

    I really enjoy this channel because it's like cooking shows used to be. When food just gets cooked, explained and tasted. No spastic editing and manufactured drama

      Please don't use that word in that way, it's offensive in many other parts of the world to cerebral palsy sufferers (seems not to be in N America, not sure why). Can I suggest twitchy or jumpy editing instead?

      @@TheErador It's not offensive in North America except for those who are looking to be "allies and advocates" for those of us who have uncontrolled muscle movement disorders of any type. We know what zooklaw means, and it isn't referring to us, it's referring to people who draw attention to themselves by "spastic" movements of many types, usually accompanied by incessant and annoying running of their mouths.
      It doesn't offend us that way Niall, we don't need your advocacy. Find another SJW cause to make yourself feel better.
      And it takes me longer to reply because of my uncontrollable limb movements, I adapt with patience and technology. I am not "victimized" , choose not to be. Zook's got my thumbs up.

    Rage Against the Machine and Glenn and Friends are probably the top two most played things on my TH-cam account. I used to think they made for quite the odd couple. Holy cow, I'm blown away! Always remember, the machine is oiled by the blood of the worker, and you don't always have to brown your beef off fully!

    Glen, I just went through the EXACT same thing with my jaw after a tooth extraction. That was about a month and a half ago. My dentist had me alternate 20-25 minutes of an ice pack followed immediately by 20-25 minutes of a heating pad every evening. Worked like a charm! Within a week my jaw was at least 80% better. 2 weeks, it was like it never happened.

    As a father of 9, we will for sure add this to the rotation during the recession, looks like about 15 bucks to serve my family, which is a cheaper meal, and if we do it right it's also a great use of leftovers repurposed

    I make something very similar but pour cornbread batter on top. I made it last night, actually.. A good go-to that is always well-received by the family..

    I love how versatile this recipe is! The filling could go on top of pasta or baked potatoes or rice, a bun/toast, or could just be eaten by itself. Yum, it sounds amazing! I bet it would even be great as a burrito!

    Cooking everything like you did is how most of us North Americans grew up eating this dish.
    Now that I'm older I Sautee my lamb mince until it's crisp, and then deglaze with a half bottle of merlot and that forms my base along with my veg, and as GOOD as it is, sometimes I just have to make it the way my momma did and throw everything into one pan.

      Tater tots would certainly be more to my taste than mashed potatoes (to which I have a visceral reaction...I do NOT like mashed potatoes).

    Whatever you want to call it, at the end of the day, meat, vegetables and spices topped with mashed potatoes is an excellent template for so many regional flavor profiles. My favorite experiment so far was using Indian flavors and chicken.

    There was a company here in Texas years ago, that made a dish similar to that, but they used tomato soup, bell pepper, peas and carrots, with a bit of chili powder, mild rotel and a dash of Worcestershire sauce. I need to make again! Thx for reminding me, and hope your mouth heals quickly.

    Ok so I am an Irish/Scott and you can't call this a shepards pie since its made with beef, beef makes is a Cottage Pie, as in Cows for "cottage" and Sheep for "Shepard's pie". That is how it goes. So this is actually a Tex-Mex Cottage Pie.

    Being Irish from Maine I always wondered where the name "Chinese pie" for what we called "shepherd's pie" came from. I never knew until I listened to a cooking show on SRI where they said that they thought the name came from Quebecois who moved to the China, Maine area learning about the meat-corn-potato dish and they called it Pâté Chinois, I assume as they "lost the language" that it got translated into English around here.

      In France it is called :''hachis parmentier'' often made with minced leftover roast beef or pot roast mashed potatoes with a lot of gruyère .

    I've had Bell's Palsy 3 times, and lingering facial paralysis as a result. I have found that Korean style soup spoons are AMAZING. They are shallower and a better shape. I also use chop sticks instead of forks. Not quite sure why it is easier, but it is! I have days where I can barely open enough to eat toast, so these items are life changers. Hope that helps someone out there! Korean spoons can be found on amazon.

    I follow this same principle with many foods. I've never really enjoyed Ragu Bolognese, so I chuck a ton of chili and spices into it until it's a sauce I can enjoy over tagliatelle.
    Do that with cottage pie and more power to you!

    I would put cornbread on top, or make this with pizza sauce, sausage pepperoni etc and add a biscuit topping. its one of those "recipes" that has a million variations,

    A nice variation is to make cornbread mix, put half on bottom of casserole dish then the minced meat topped by other half of cornbread. Or, as Glenn mentioned, use corn tortillas and layer like a lasagna.

    Nice thing about that type of dish, what I call Tater Topped Casseroles, is that there is so much you can do with them. I like to make what we call a "Pie Without a Shepherd" to take to potlucks and family feasts. It's a version using assorted beans instead of meat, which means any vegetarians present can also enjoy it. Make it without any dairy and it becomes vegan - but I love cheese so I don't often do that.

    I have been making my shepherd's (cottage) pie with salsa for a while. I think that it really adds to the flavor. One other thing that I do is add a flour roux to the meat mixture as a binder so that I can slice and freeze the leftovers.

    Ive done several similar chuck wagon pie. tex-mex pie type dishes. With the right seasonings you can make chili mac or american chop suey southwest style. I also like a southwest flavored sloppy joe with shredded cheese, cold on tortilla chips. Im not a fan of corn unless its roasted or mashed potatoes, smashed with lots of chunks works though.. I usually go with tots or shredded hash browns because they are easy and to keep it simple.. back in high school home economics we made a ground beef dish and used bisquick as the crust, Ive done that over several types of casserole/hot dishes

    This looks like a really good one for our family tex/mex and shepherd's pie are both two of our favorite meals and the mixture of the two kind of flavors I think you did really well and we'll be trying this one I'm sure. My family would think a layer of cheese under or over the potatoes would be a requirement but other than that yummy.

    I make something similar to this, but I put a jiffy corn muffin mix on top. Prepared as the package says, maybe a little extra milk to thin it out, Cheese on top. Makes a really tasty meal.

    Calabas (light green squash) and yellow squash would be fantastic. I one used this recipe with beans and meat and could somehow get a cornbread topping that would be awesome as well.

    Don't know if you read comments, Glen, but don't sleep on the jaw issues. My mother-in-law had that happen at the dentist, and it caused migraines. Couldn't hurt to get it seen.

    I'm always looking for variations on food I grew up with. You already know that the kids will eat it, but it is new at the same time. I'm eating something I grew up with right now. We would get some huge zucchini from our garden and my mother would split them in half lengthwise, scoop out the seeds and stuff them with ground beef and rice. If you have done this, I would love to see your take on it. Hope you are feeling better soon.

    This might be weird but I like to put the potatoes on the bottom, meat on top Keeps the potatoes nice and soft.

    I make something similar, though only in a spiritual sense. Texas style chili* topped with cornbread. It's great and the kids love it!
    If you want an amazing umami hit, try Chinese - Vietnamese mushroom seasoning. I like the Po Lo Ku brand.
    *Here in New Mexico we call chile con carne with beans Texas style chili. Don't tell anyone from Texas, unless you want them to have a stroke.

      I won't have a stroke lol! I do that but with black beans. My husband's family only did it with pinto beans, but I've convinced several that each bean has a unique flavour.

      Unfortunately, I a native of of Texas and I’ve always had pinto beans in my chili I know it’s something of a crime but I think we grew up doing it that way because beans were considerably cheaper than meat and my parents had to feed three growing children so…

      The funny thing is that, even though we're neighbors, we don't really eat chili in New Mexico. We have lots of dishes based on chile (the old-timers say "comida sin chile no es comida" or "without chile, it ain't food".) but nothing like Texas chili. I remember when I was a kid we went back east to visit my dad's family. There was a chili cooking contest at the local bar and they were sure that my dad, being from New Mexico, would win. He had no idea what they were talking about and ended up making carne adovada. It didn't go over too well. 😂

    That looks yummy! You could also use it for lasagna.
    I understood that shepherd's pie had lamb in it (hence the name shepherd's) and cottage pie had beef or pork.

    It’s pretty common here to make a cornbread mix and pour it on top of your pie like that it’s called tamale pie here in Texas sweet potatoes might also be a good addition with all the spices.

    Growing up in Texas, cornmeal mush instead of potatoes makes it tamale pie.
