      Thanks Scott. One thing about BBQ is it's fun to eat the practice subject. I will keep practicing and never get it perfect so I get to keep eating the brisket. LOL Good to be back.

      Thanks for watching. I like the SPG. Yes a person can mix their own, but this makes it easy. Just the right proportions for my taste also.

      The Heritage Oven has the easiest temperature control and best temp stability of any smoker I have used to date. It is a pleasure to use and will run 6 to 8 hours on one load of lump charcoal.
      Cons, it could use a 4 leg setup instead of the 3 leg arrangement. It never feels "tippy" but does wiggle around quite a bit when you are working in it. Thats about the only Con I can think of.

      I think it was about 8 to 10 lbs. and the cook went about 12 hours. If I remember correctly. Thanks Jeff.

    I was hoping to see the point get sliced or cubed. You don't seperate the point from the flat at about 180-185?

      No, I take the whole brisket to the finish without seperating early. I gave the point to my friend. It is only me and the wife here so I give away a lot of BBQ after a video. I agree with you though. Cubing the point and making burnt ends is like eating brisket candy.

    Can the Heritage fit a large turkey? I can't tell how deep the cooking chamber is.

      I've never tried. I can measure the depth and let you know. It WILL fit a 12 to 13 lb turkey. I don't like to smoke anything larger than that because it stays in the danger zone too long. Let me know if you would like the dimensions.

      @@jcbever1511 There are 3 grates and even though the cooking chamber is tapered slightly I found that all 3 grates measure the same. 27 1/2 x 11 1/2 inches. +/- I hope this helps. Whole turkey of medium size should be no problem, but I don't think spatchcocked style would work unless you cut it in half down the middle.

    Nice video brisket looked amazing but the smoker looked kind of flimsy every time you touched it it would shake

      Thanks for watching. The smoker is pretty solid, but the legs/wheels are in a tripod arrangement. If it had 4 legs and solid wheels instead of inflatables, it would appear much steadier. It sure is easy to use though so I can live with a little shake.

    Randy. Question about the Heritage Good One oven. I've watched you cook on that cooker several times and I have to say it appears flimsy as hell. What I mean is when you move the doors or move the damper the whole oven shakes. Is it stable?

      Hi Brian. Since it has two legs with inflated wheels and one leg on the front it is kind of a tripod arrangement. This really allows for some movement as the wheels compress under the forces. If it had four legs it would be more stable. I does move a bit, but as far as "stability" I have never felt that it might fall, etc. If I put it on steel wheels and put an extra leg on the front it would move around less, but it does not really bother me.     Brisky looks good, but the Heritage looks like to wants to roll over flipping the meat.

      I agree that it does wiggle quite a bit with the 3 point frame. Having it on steel wheels and dual front legs would probably make it look and feel sturdier.
