Coconut Cookies - No Flour, No Eggs

  • The coconut cookies are easy to make with ingredients that are accessible. Enjoy them on their own or with a cup of tea/coffee!
    Recipe: Coconut Cookies - No flour, No Eggs
    Ingredients:
    Makes 21 cookies
    200g (3⁄4 cup) of sweetened condensed milk
    200g (2 ¼ cups) of desiccated coconut
    70g (½ cup) of white chocolate, chopped
    30g (¼ cup) of almonds, chopped
    70g (½ cup) of dried cranberries
    ½ teaspoon of almond extract
    Instructions:
    1. Preheat the oven to 170 °C / 150 °C fan / 325F / Gas mark 3.
    2. To a large bowl, add the coconut, condensed milk, chocolate, almonds, and cranberries. Use a spatula to mix until well combined.
    3. Line a baking tray with parchment paper. Wet the palm of your hands with water. Take about ⅛ cup or 2 tablespoons of the mixture at a time and make small balls. Makes 21 balls. Bake for 15 to 20 minutes.
    4. Allow to cool down before serving.
    Notes/Tips:
    - The cookies can be served warm or cold. They are best served cold.
    - The cookies can be stored in an airtight container at room temperature for up to 1 week.
    - Dark chocolate can be used instead of white chocolate.
    - Vanilla extract can be used instead of almond extract.
