I like the insides of the potato and my husband likes to eat the skins filled with green chili, kimchee, vegan cheese, etc. We live in the Southwest and green chilis are LIFE. During green chili season, you go get your giant bag of roasted green chilies from the roaster (almost always a family run business who have been doing it for generations). At home, you process them how you like (most people chop and freeze them). The smell of roasted green chili hangs in the air in New Mexico and parts of Colorado all during roasting season. At this time, you also buy the stringed chilies called ristras. We use them as decoration but at the same time pull chilies off to use all year until you’re ready for your next ristra at the following harvest. So happy to see green chilies represented on the channel!!

There used to be a food court spot at the mall (1970's) called One Potato Two Potato that served baked potatoes with your favorite topping. This was before microwaves and we didn't eat baked potatoes often because they took so long to bake in the oven.
That's almost exactly how I make my baked potatoes. The only difference is once I coat the outside with vegetable oil I then sprinkle sea salt all over the outside before baking. Yum!
Around the time I was in junior high school, my mum used to take us kids out to eat sometimes at a place that had extremely flavorful baked potatoes. One time Mum thought to ask how they got that flavor, and the answer was that before they foil-wrapped the taters for baking, they coated them with ... Italian salad dressing! So from that day on, that was included in Mum's baked potato prep.
A medium size potato has seven grams of protein. There is a guy in Australia who ate ONLY potatoes for a year (don’t think I could do that). At the end of it he was healthy and he had lost a ton of weight. Love your videos!!! I look forward to them every week.

On leftover night, my mom would do stuffed baked potatoes with leftovers. Meatloaf, chicken, ham, steak, sausage, hotdogs, BBQ pulled meats, etc. We would also put veggies on them as well. Whatever was left over or a remnant from cooking or Taco night. Tomatoes, onions, broccoli, peas, carrots, green onions, microgreens, etc. Sour cream, butter, salsa (Dad's favorite), shredded cheese, cheese sauce, sour cream ranch, BBQ sauce,, etc.
There was a place in Greenwood Indiana mall that had like 30 choices for toppings for baked potatoes back in the 1980s. I’ve never been a fast food person so I loved having a better choice.

I love a good potato meal, when I was teaching they had a salad bar for the teachers and every once in awhile they would do baked potatoes with the broccoli and cheese. I bought every time on those days! So delicous. When I was a kid we did breakfast potatoes. My granny would bake the potato and then do a fried runny egg, bacon or sausage... or both. It was so tasty and the runny egg would moisten the potato. I loved them.
There is a church down the road from me. They do a free lunch on Wednesdays. And honestly some times it is really helpful for my family. Once in a while they do baked potatoes topped with cheese sauce and a sloppy Joe made by one of thr ladies. It is so good!
We bake our potatoes nearly the same way you do (a few less "pokes" and we apply a light coating of oil with our hands or a paper towel). I'm going to try it your way next time. I first tried a pototo bar in the 1980s when I was teaching. We enjoyed one last March for a church dinner. So comforting, imo. Thanks for some good recipes w unique combinations!
I normally slow cooker bake my potatoes because so much of the year I don't want to heat the kitchen with the oven. That and for years the only vegetable my youngest would eat was baked sweet potato. These recipes look fun.
It’s baked potato season at our house! We have them once a week, just about, this time of year… usually as a main dish leftover vehicle. What an awesome cookbook! Here’s my thoughts: the first potato, the chicken florentine, wouldn’t it be good with the addition of buttered bread crumbs?? 😂 And that third potato… wonder what else the egg white/folded in yolk would be good on? Some casserole or stew? Idk… they all looked really good. I’ve recently found out that to store potatoes long term , get a sturdy cardboard box, line the bottom with newspaper, one layer of potatoes, one layer of newspaper and so on. Box should be stored in a cool dry dark place, like your husband’s side of the closet 😂 It said the potatoes last a very long time with this storage method.

I like to microwave my potatoes. Only takes 4-5 minutes and voila! Much easier than baking in an oven and heating up the whole house. I may try that chile relleno one; looked interesting.
As a New Mexican, I know that you can never go wrong when you combine green chile, cheese, and potatoes, it's magic. Breakfast burritos with green chile, eggs, bacon, potatoes, and cheese are just SO amazing. And for Thanksgiving, putting red chile (no meat, just a red chile sauce) over mashed potatoes is divine. Loved the video!

I saw on Americas Test Kitchen where they plopped the potatoes in salty water before baking and they turn out great, particularly if you eat the skin of the potatoes. I will try your method and see if I prefer that. I used to work at a mall that had a baked potato restaurant, that’s all they had, with a variety of toppings. I usually got the broccoli and cheese on top but my favorite is with butter, sour cream and chives from the garden 😋
the only restaurant i know that does different baked potatos is McAllisters. Basically very similar to Panera but better 😂 one of the options is “A Spud”

Love to use leftovers to top a baked. Chicken Florentine sounds great. Pizza ones would be good for folks who don't do wheat. The British don't have Russet potatoes, they use Moris Piper potatoes. They are a bit smaller but as I understand have the same fluffy texture.

When the fridge is running low, it's amazing how good a nice scoop of cottage cheese and a sprinkle of leftover veggies or meat is on a baked potato (don't knock it til you've tried it!)
In winter, I enjoy putting foil wrapped potatoes in my woodstove to bake. Microwave potatoes are quick and easy but there is just something decadent about a real baked potato, even before you top it. My cousin is a big twice baked potato fan. ❤ 🥔

What a fabulous idea!!! I was trying to think of something for an open house, and I think you did it for me. ❤🎉 Baked potatoes and several crockpots of stuff to throw on the potatoes, along with dishes of butter, cheese, sour cream, bacon, and maybe some pepitas. I have an old sheet pan like your "drip" pan. I also have a silicone sheet on the oven floor that I got on Amazon. Instead of a serving spoon like yours, I have two grapefruit spoons for that kind of stuff. That Florentine potato looks marvelous. Because I have allergies, I can't eat bread and crusts. So I am always looking for something else to mimic pizza. So YUM. But I feel, much like my loyalty to Duke's when it comes to mayonnaise, I only use Pastorelli's for pizza sauce. I am seriously reconsidering moving somewhere warm in retirement because the grocery stores don't sell Pastorelli's. It's that good. I would have to use Amazon, and it would be MUCH more than I usually pay for it. Winter is one big chicken stock! I bet that relleno potato would be good with cream cheese. VERY pretty presentation! Wow! Your face just shows how good it is. I remember food courts with loaded baked potato restaurants. This book is a good prompt to get the creativity flowing. We always wrapped our potatoes in foil growing up too, now I just put them in a baking dish. I’ve never put them right on the rack but now I know I could save myself a dish to wash! Lol definitely going to try these recipes I’ve just bought a 10 pound bag and so did my brother by accident who lives with my and my boyfriend. Yay! You have a meat pan! The well-used metal pan than can also do for potatoes and other things. My grandmothers and mother always had a meat pan, which did need replacing from time to time. 👍❤️

What a great video! Thank you so much. Someone below already made this comment, but I want to second putting kosher salt on the outside of the potato after the oil. I was told this hint by a restauranteur. The salt isn't for taste, but to help draw out the moisture from the potato to make it fluffy.

I do baked potatoes in the microwave. Prick once with a fork and about 9-11 minutes for two medium russets works for me. Thanks for another fun retro cooking episode. Always fun!
Baked potatoes with everything like butter and cheese and sour cream, bacon and you can do potatoes in a microwave oven for about 15 minutes. And I like potato pancakes.
I microwave 6 minutes. It works in mine, but then I crisp the outside in a hot oven or the air fryer to get the best of both the speed of the microwave and the crispy skin from the oven. YMMV

The best baked potato i have ever eaten was at a BBQ restaurant in San Antonio. OMG. BBQ baked potato. It was so huge it ended up being 2 meals.

It may be fussy, but whipping the egg whites is what gives chilli relleno the texture it has. That final recipe sounds amazing

Love to use leftovers to top a baked. Chicken Florentine sounds great. Pizza ones would be good for folks who don't do wheat. The British don't have Russet potatoes, they use Moris Piper potatoes. They are a bit smaller but as I understand have the same fluffy texture.
What a great idea for a video! I'll definitely keep an eye out for this cookbook, I LOVE topped baked potatoes as a meal. When the fridge is running low, it's amazing how good a nice scoop of cottage cheese and a sprinkle of leftover veggies or meat is on a baked potato (don't knock it til you've tried it!)

In winter, I enjoy putting foil wrapped potatoes in my woodstove to bake. Microwave potatoes are quick and easy but there is just something decadent about a real baked potato, even before you top it. My cousin is a big twice baked potato fan. ❤ 🥔

I love my potatoes baked without the oil. The skin ends up nice and crispy and that is my favorite part. Glad to see one of my favorite foods featured. 😊

A medium size potato has seven grams of protein. There is a guy in Australia who ate ONLY potatoes for a year (don’t think I could do that). At the end of it he was healthy and he had lost a ton of weight. Love your videos!!! I look forward to them every week 😁. Take care of yourself 💛

What a fabulous idea!!! I was trying to think of something for an open house, and I think you did it for me. ❤🎉 Baked potatoes and several crockpots of stuff to throw on the potatoes, along with dishes of butter, cheese, sour cream, bacon, and maybe some pepitas.
I have an old sheet pan like your "drip" pan. I also have a silicone sheet on the oven floor that I got on Amazon. Instead of a serving spoon like yours, I have two grapefruit spoons for that kind of stuff.
That Florentine potato looks marvelous.
Because I have allergies, I can't eat bread and crusts. So I am always looking for something else to mimic pizza. So YUM. But I feel, much like my loyalty to Duke's when it comes to mayonnaise, I only use Pastorelli's for pizza sauce. I am seriously reconsidering moving somewhere warm in retirement because the grocery stores don't sell Pastorelli's. It's that good. I would have to use Amazon, and it would be MUCH more than I usually pay for it.

We always wrapped our potatoes in foil growing up too, now I just put them in a baking dish. I’ve never put them right on the rack but now I know I could save myself a dish to wash! Lol definitely going to try these recipes I’ve just bought a 10 pound bag and so did my brother by accident who lives with my and my boyfriend. Yay! You have a meat pan! The well-used metal pan than can also do for potatoes and other things. My grandmothers and mother always had a meat pan, which did need replacing from time to time. 👍❤️

Just like with your well loved pan, I love having some knives I don't care about so I can cut on plates or on a sheet pan or something that I would never do with a good knife.

Someone below already made this comment, but I want to second putting kosher salt on the outside of the potato after the oil. I was told this hint by a restauranteur. The salt isn't for taste, but to help draw out the moisture from the potato to make it fluffy.

I do baked potatoes in the microwave. Prick once with a fork and about 9-11 minutes for two medium russets works for me. Thanks for another fun retro cooking episode. Always fun!

Baked potatoes with everything like butter and cheese and sour cream, bacon and you can do potatoes in a microwave oven for about 15 minutes. And I like potato pancakes.
I microwave 6 minutes. It works in mine, but then I crisp the outside in a hot oven or the air fryer to get the best of both the speed of the microwave and the crispy skin from the oven. YMMV
