A very happy Easter! My father's big thing was to insist that ham had a bone, and insist my mother make ham and navy beans after every holiday. If we went to somebody's house, he would ask if they were throwing away the ham bone. If so, he would ask for it "for the dog." The dog never saw that bone when we had a dog, and before that, we were supposed to pretend and not blurt, "But we don't have a dog! Are we getting a dog? Yay!!!" When we got older and had holidays at our houses, we would lie and tell him we were going to use the bone.
The Great Depression did that to our parents. Wasting a soup bone or food was unthinkable. Throwing away tin foil after one use, impossible. And so on....
My mom’s go-to leftover ham recipe was called Ham & Noodle Casserole. It’s basically just egg noodles, cubed ham, peas, and cream of mushroom soup. So yum! Except you don’t actually bake it…it’s all just heated up on the stove…so is it still even a casserole??
I like to take the leftover ham and divide it in snack and sandwich baggies. Then the small baggies get put into a large freezer bag. Going forward there's a reasonable amount of ham on hand to incorporate in ours meals.
A good use for leftover ham is ham stew. You boil the bone and take off the meat, then use the resulting broth to boil potatoes, carrots, onions, celery, and ham chunks, when veggies are soft, you thicken with flour slurry or cornstarch slurry. Check seasoning at the end, as ham can be salty. I like this served with homemade biscuit.
You are really celery-ing it up lately! I'm impressed! I have two beloved leftover ham recipes--a ham/corn/potato chowder and a ham/potatoes/peas casserole. Ham and peas are so perfect together, I think you're right that peas would be great in the casserole you made, which I am going to make too because it looks delicious. I bought a 2 1/2 pound ham for me and my husband for Easter and I also just remembered i have a pound or so of leftiver Christmas ham in the freezer! So maybe I'll make the ham sauce in the toast cups, too--except I think it would be delicious over cornbread. I appreciate all the hamspiration! ❤
For decades I have occasionally enjoyed leftover cubed ham in a white sauce over toast. It's something my mother occasionally made and I imagine that cookbook expanded on that to make it more attractive. We did not put mustard. But you certainly could. We also used to make a can of mixed vegetables with the white sauce as a side and you could make the creamed ham with little vegetables added. It is very good and sometimes I crave it.
Over here people take Lea & Perrins seriously. The condiment was accidentally made by that duo when the they were trying for a different sauce but left it to ferment. No joke. Victorian happy accident. I buy the cheap stuff, so Worcester sauce it is. I pay too much for imported A1 but there’s nothing equivalent.

Your leftover vegetable soup story reminded me of an old Ina Garten episode where she said she put leftover undressed salad through the food processor and added it to soup. I’ve never done it but it makes sense as a way to use veggies or salad that aren’t going to get eaten.
I found a G/Housekeeping book that we had when I was a kid, pretty much worked my way through the cakes and biscuits section before I was 12. It was published in the 60's and much of it reflects that.... Great to have it again, thank you Ebay
I distinctly remember having Corning ware that went from stove to oven and had detectable handles, I have a 50+ year old piece that is a fry pan with lid/casserole that I still use. I' lost the handle in a military move decades ago but the pan works for quich, deep dish pizza and so much more.

Oh gosh, I remember when I was little, it was the funny family story that I’d told my mom I didn’t like leftovers, I preferred new-overs! My mom was so good at making things out of leftovers or making things from whatever was in the pantry. I have fond memories of her inventive meals growing up.
When you were speaking of doctoring up foods….it reminded me of how food was stretched also. Adding things to make more food to feed more people. My Gma would stretch food from living through the depression.

I always do those 'doctored' recipes that you do with the beans with ham. It's a family tradition! Every kind of soup can use some added extras. Beans, chili, pasta, scalloped potatoes, etc etc. I get lots of good ideas from your videos. 👍

One of my very favorite meals comes from when I was a child and I still make it whenever I have leftover ham. It is creamed ham and mushrooms. Just make a medium white sauce, add some sherry to taste, sautéed fresh mushrooms and diced up ham. I do serve it over toast cups which I feel elevates the dish visually. It is quick, easy and very delicious. I do like to serve it with peas or asparagus as well.
A couple of years ago, I suddenly detested salmon in any form. I try to eat some at christmas and Easter, but no. Except the warm smoked double-sided salmon made specially for a fishmonger at the grocers. For some reason, it's so good that I swear I can hear angels singing, and I do a little dance!😂
I made this the Monday after Easter the ham Alfredo casserole. It was really good. I changed the vegetables to just peas since I don’t like green pepper and it turned out really good.

I would’ve slapped some buttered bread crumbs on everything you made. 😂. Another good ham use up: grind or chop ham finely, add mayo and sweet pickle for ham salad. My Mamaw used to make the best ham and potato casserole. It had a white sauce and onions in it, and instead of bread crumbs she made homemade buttery crispy croutons for the top. It was so good.
Can I gently suggest that if you're going to ever try "Offal", tongue and heart are the easiest ones to start with! I used to make our houseful of seven teenagers chili with tongue, and it worked really well.
I really like a good comfort casserole and the ham one looked tasty and easy to make. I can easily switch to gluten free noodles to make it, so my partner can enjoy it too, since he loves ham like I do. Tightwad Gazette!! There you go surprising me again. I loved that book back in the late 80's and 90's as I was raising my large family. I learned so many tips and unexpected ideas from it. I wonder how it would translate to a channel like yours or TikTok. Also, I really liked seeing "an hour before serving" with these recipes as that is an on-going struggle - when do I start cooking dinner to have dinner at a specific time. One of those aspects of cooking you can learn over time but knowing that ahead of time is a game changer. Happy Easter! 🐇

I love ham. My local grocery store sells packages of "ends and pieces" for stupid cheap. Forget the ends nonsense...no such thing in the packages, just lovely thick slices that I cut into small cubes or I cut them into thin slices for breakfast. Fabulous! I buy it regularly. My go-to for leftover ham, other than in a pot of pinto beans is picking the bone so you have very little meat but it is stretched so very budget friendly. Roll out homemade sourdough, top with a layer of Swiss cheese, diced onion and the tiny bit of ham and roll up and cut into pinwheels. Top with spicey mustard and butter and bake.
I use leftover diced ham in my three meat paella recipe along with some smoked beef sausage and some chicken. If I still have the bone, I throw it in when I add the chicken stock to the pot and it just adds such wonderful flavor.
I love and use the Tightwad Gazette still to this day! Sure some of the actual ideas are old fashioned but the theory behind saving money and resources is ever current. Her overall goal was to help change people's mindset to one of creative thrift. Her mixes and batch cooking recipes are all very good even by today's standards. I have a tried and true favorite cook book my in-laws gave me for a gift. It’s the Good Housekeeping cook book from 1990. It has a soufflé on its cover and it’s a winner every time. I will be looking for your cook book to see if i can find it here in Canada. As always great fun video.

Offal/variety meats are really pretty good. We lived on a farm when I was little and when our steers were slaughtered, Mom made many meals with offal. She was frugal and hated waste. I don’t like beef liver, but chicken livers with bacon and onions are delicious, and spiced tongue is wonderful. Don’t be afraid of offal! Especially as we are trying to be sustainable; eating the whole animal is the way to go! Maybe you have to be little with a persuasive Mom…🤣

I love ham salad. I think it’s such a forgotten preparation for ham. Everyone I make it for always loves it.

That was a daylightful visit back to 1971. Ham and cheese supper bread and corn chowder. Those are my two favorite uses of leftover ham.

Tightwad Gazette!! There you go surprising me again. I loved that book back in the late 80's and 90's as I was raising my large family. I learned so many tips and unexpected ideas from it. I wonder how it would translate to a channel like yours or TikTok.
Also, I really liked seeing "an hour before serving" with these recipes as that is an on-going struggle - when do I start cooking dinner to have dinner at a specific time. One of those aspects of cooking you can learn over time but knowing that ahead of time is a game changer. Happy Easter!

I always make a ham and Swiss casserole with leftovers. The whole family loves it. (Allrecipes). I use the bone for either split pea or black bean soup

I love ham. My local grocery store sells packages of "ends and pieces" for stupid cheap. Forget the ends nonsense...no such thing in the packages, just lovely thick slices that I cut into small cubes or I cut them into thin slices for breakfast. Fabulous! I buy it regularly. Thanks for posting these recipes. I'm going to try them!
I like the idea of leaving it in an individual serving cup. Ramekins would be great for this, too.
Thank you for the recipe for the parisienne soup. I really enjoyed the recipes you did today. They were right down my alley. I usually intentionally try to buy meats on sale around or after the holidays. This ham casserole was new to me with the cream cheese. I'll be trying that and including broccoli. Was very interested in your comments about the cheesy and tangy flavor with the gravy. Really good video for me today.

Oh my gosh, my dad's grandparents were Bucholtz too, and his mother, (my grandma) was called Louise! (I just finished watching the Easter menu from last week lol) Anyway, I thought that was fun! Also, we are a Hamily, and love spoonbread and buttered asparagus with it. So good!!! Happy Easter!! 🐰🐰🐰

My go-to for leftover ham, other than in a pot of pinto beans is picking the bone so you have very little meat but it is stretched so very budget friendly. Roll out homemade sourdough, top with a layer of Swiss cheese, diced onion and the tiny bit of ham and roll up and cut into pinwheels. Top with spicey mustard and butter and bake.
I was going to add the same comment about Amy's last name, and I still have her book on my shelf.

I use leftover diced ham in my three meat paella recipe along with some smoked beef sausage and some chicken. If I still have the bone, I throw it in when I add the chicken stock to the pot and it just adds such wonderful flavor.
There was a green beans & ham with cheese recipe you did a while back that would be great for leftover ham...I've wanted to make that one for a while!
I love and use the Tightwad Gazette still to this day! Sure some of the actual ideas are old fashioned but the theory behind saving money and resources is ever current. Her overall goal was to help change people's mindset to one of creative thrift. Her mixes and batch cooking recipes are all very good even by today's standards. BTW her last name is pronounced "decision" as in "She made a decision to marry a man of eastern European descent (her words, not mine LOL!)"

I make this regularly but I use low to no fat small curd cottage cheese instead of cream cheese for lower calories.

Nice recipes. Like the casserole. I can eat turkey leftovers all week but ham only for a few days. Then I just freeze it in cubes for soup or omelets.

I think I enjoy using up ham leftovers, more than I enjoy the ham dinner itself self! This year I am planning on making split pea soup and creamed ham on cornbread. I will probably try the toast cups too! Thank you for the video

I have a tried and true favorite cook book my in-laws gave me for a gift. It’s the Good Housekeeping cook book from 1990. It has a soufflé on its cover and it’s a winner every time. I will be looking for your cook book to see if i can find it here in Canada. As always great fun video.

Offal/variety meats are really pretty good. We lived on a farm when I was little and when our steers were slaughtered, Mom made many meals with offal. She was frugal and hated waste. I don’t like beef liver, but chicken livers with bacon and onions are delicious, and spiced tongue is wonderful. Don’t be afraid of offal! Especially as we are trying to be sustainable; eating the whole animal is the way to go! Maybe you have to be little with a persuasive Mom…🤣
