  • Ben & Jerry's Superfudge Brownies are the best easy brownies from scratch (in my opinion, anyway)! I used to make this recipe all the time but haven't bake up a batch in a few years. I am so glad I made these again, and am so happy to share them with you.

    SUPERFUDGE BROWNIES (from Ben & Jerry's Ice Cream & Dessert Book, 1987)
    4oz unsweetened chocolate
    1/2c (1 stick) butter
    4 eggs, at room temperature
    1/2tsp salt
    2c sugar
    1tsp vanilla extract
    1c all purpose flour
    1. Preheat oven to 350. Butter and lightly flour a 9x13 inch pan (or use butter parchment paper like I did)
    2. Melt the chocolate and butter in the top of a double boiler over simmering water. Let cool in the pan to room temperature. If you're in a hurry, you can quickly cool it in the refrigerator, but be sure it doesn't solidify again.
    3. Beat the eggs and salt in a mixing bowl until very fluffy. Gradually beat in the sugar and vanilla. Fold in the cool chocolate mixture. Add the flour and fold in until just blended. It is important to fold in the chocolate and flour gently to keep the batter as fluffy as possible.
    4. Pour the batter into the prepared pan and smooth the top. Bake for 25 to 30 minutes. Let cool in the pan completely before cutting.

    We visit Ben&Jerry’s in Vermont a couple times a year. That area of Vermont is wonderful. There are lots of little antique spots, yard sales on crisp fall weekends and always a church rummage sale. Vermont is a beautiful romantic place to visit. I live in New England in Salem MA but it is always a great get away in VT

    my mom got this cookbook when I was in high school. I did a lot of baking and this recipe has been my go to brownie recipe for the last 40 years. It's just that good. I got the book after she died. I need to make some of the ice creams I did make the one using the superfudge brownie which was delicious.

    I used to go to the Ben & Jerry’s factory almost every year when I was growing up, we’d take the tour and get our free samples and visit the Ben & Jerry’s flavor graveyard, I never had the cookbook though! I love it when someone starts making noise right when I start recording 😂 These brownies look delicious!

      Ohhh I’ve wanted to visit the factory but it just hasn’t happened yet. Someday! I used to collect the empty containers as a pesky teen. 🤣 I’m sure they’re still floating around somewhere in my parents’ house!

    Awww! Love that it's still got its original tag from Marshalls on there! The book sounds like such a fun one! I like the style of their artwork. It's got that sorta 70's vibe of all the whimsical design with watercolour fill. I'm all about the parchment bakes these days... it really makes things so much easier. Light and chewy loveliness!       Definitely a 70s vibe! Not sure if they've kept up much of that on their current packaging or not. Parchment is so the way to go for me, too. We picked up 2 giant rolls at Costco a year ago - and I'm nowhere near finishing the first one!

    I have that book. I have made a few kinds of the ice cream but haven’t used it in awhile. I don’t think I ever made anything from the bakery section. I always wanted to try the chocolate chip cookies. Maybe one of these days!

      I think I may have made the chocolate chip cookies once before! The bakery section of this book is small, but really packs a punch in terms of great recipes.

    Have you ever made special brownies or banana bread? Add a few grams of Snoop Dogg OG decarboxylated to the mix. Ben & Jerry would approve.
