I once toured an imitation crab factory. Very interesting. The used pollock that was ground to a puree with seasoning added.
The most interesting part was the cooking process. It was extruded in a very thin strip along a conveyor belt then rolled , cut and package in the same belt.

I use to work at a sushi restaurant and we had imitation crab (krab) and the kind we got would become little shredded pieces when crushed them by hand. We would then fry them and use as garnish, and of course I'd throw it on some rice for a quick Scooby snack for myself .....Mmmmmm

Winn-Dixie used to carry Fisherman’s Wharf brand that was really good. I’ve tried other brands but they taste “soapy” to me.
I mix this with a small sized pasta, red & yellow bell peppers, celery, onions & mayonnaise.
I dice the veggies small, around a 1/4 to 1/2 inch pieces and layer them on multiple paper towels to drain overnight in the fridge. If that step is skipped, all the juices release after it all put together and it looks awful & gets watered down…
Basically a glorified macaroni salad. One pound of elbows or other small pasta to 2 pounds of faux crab meat.

Well, there _is_ a better (and shorter) name: the original japanese "surimi". We use that word in France.
I love surimi! Didn't know you could make chips out of them. I'll have to try that.
Note that some surimi brands have a better crab taste than others. Some even do contain actual crab.

Ya, in Canada I’ve always known it as surimi too.

I grew up eating imitation crab salad sandwiches as one of our bagged lunches for school. My mom made it the same way as tuna salad, with diced celery and mayo and a little seasoning. I loved the stuff. Would even eat some straight sometimes.

this takes my family tradition of sea food nachos to a whole other level. The original recipe is You take this imitation crab meat the bite sized ones. Then you add Monterey Jack cheese and you use the tortilla chip of your choice then you top with Paprika and bake at 350 until they are hot golden and cheese is melted

We have imitation crab here in Australia too. But our super market doesn't call it that, they call it seafood highlighter. Or seafood salad mix

You should try oyster stew. It's made with canned oysters, half and half, a stick of butter, salt and pepper. Put the oysters and their juice in a large pot with half and half and stick of butter. Salt and pepper to taste. Warm gently on low heat for about 20 to 30 minutes and serve with oyster crackers.

I always did this in my air fryer because i dont need to use tons of oil especially for new year snack. I also dont use any seasoning because the filaments are already seasoned (in my country you can just lightly blanch it and eat it like that). Sometime to make it more festive we will sprinkle salted egg powder (dont forget to air fried curry leaves too) on the air fried filaments nyummmm
