Im late to answer, but it was beginning of combat because for some reason the game went to beginning of combat instead of staying in the main phase. You cannot crew at beginning of combat you must crew in main phase.
You can definitely crew at any point (instant speed) but parhellion does not have any enter the battlefield triggers and magic online has a pretty bad UI. Basically beginning of combat trigger happened and brought back the rat but because there was no triggers to respond to and no creatures could technically attack (the rat had summoning sickness) the game skipped declaring attackers. You have to “set a stop” at beginning of combat so that the game will not just skip through it.
That dimir deck should run something like 2 nightveil predator (flying deathtouch hexproof 3/3 vampire for UUBB from guild of ravnica). With all the removal they run if they stick a predator that may be hard to get rid of
Nightveil is really slow and doesn’t really do much on the board, because pioneer is too fast of a format to stick a 3/3 on turn 4 and hope to ride it to victory. At most it’s probably going to trade and at that point a removal spell usually better (and cheaper).
Talking trash about MTGO when Arena is the reason I only watch about half as much magic content as I used to😢. I thought i just wasn’t used to it at first, but no it turns out I still hate it 🤷🏻♂️😂

The other vehicles have trigger abilities as they enter so in response to those abilities you can just crew
