What makes Adana perfect for foodies is when you look at their faces, every chef is proud of what they are cooking/preparing no matter how simple the food/drink is.
This is the point. Seemingly low number of ingredients end up great tasting food because of the technique and simplicity. When I was child, I thought we were poor because we couldn't affort meat grinder and making kebabs without knowing the meat shall be ground with knives(large or double small knives)

Adana kebap is my favourite food, its a unigue and delicious food belongs to Adana, and not everbody could prepare it like the locals of Adana, it requires high level of mastery, a must have to try before dying !!!

Some translation notes: 7:15 the börek contains “pastırma”. Although ‘pastırma’ and ‘pastrami’ originated from the same word, they made differently. Pastırma is dry marinated mostly with ‘cemen grass’, pastrami is wet marinated, cured with brine. 25:35 he says “kaz başı”, meaning ‘goose head’, its a measurement unit, there is also “kuş başı”, meaning ‘bird head’ for smaller meats at 27:20, his little strange gesture is trying to explain that the ayran was prepared traditionally, made with a special tool called ‘churn’ (yayık). The owner of the restaurant keeps saying “lokum lokum”. Lokum is Turkish delight or something very tasty and tender in Turkish. The desert called bici bici at 31:46 is famous in Adana and surrounding cities as this region may get extremely hot in summer. The Adana people is humorously famous to gun shot the sun as they get very angry with the heat.

Yaay!! Another hour long episode of sensational tasty treats. Adana has everything a foodie needs to be happy & satisfied. The first location presenting the process of borek is so amazing from the factory to the shop each step is treated with such excellence & passion. The kabobs are prepared with expertise & consistency of skilled craftsmanship in a sanitized kitchen catered to grilling the seasoned meat skewers over a temperature controlled charcoal grill. The beverages are even prepared with fresh ingredients providing hydrated healthy choices for adequate nutritional value. It even shows in each restaurant how the chefs & servers have passion & love for their jobs which is a sign of confidence in their products. I'm a bit OCD so a clean sanitized organized kitchen & restaurant is so satisfying and special to me. The quality of selected meats grilled with the chillies gives me hot summer great vibes overall. However, the No.12 restaurant displaying the home cooked comfort cuisines brought rumbling to my stomach lol. Omgoodness what a amazing episode!! I laughed when i saw the bici bici. When i was a small child visiting Turkey with my parents, me, my father and brother would go into Adana and get bici bici. But i was a skinny little kid and couldn't finish it. So many years later when i went back the old man recognized me and said i'll give you a small plate cause you can't finish a whole one.

I definitely recommend you to visit Afyonkarahisar and try the special foods of the city. Afyonkarahisar is very close to you due to its location. And you will never regret it. Dolma is almost the same we have in Greece (me call them "dolmadakia", which means "small dolmas"), in both versions (with meat or without, just rice & spices). The veggie version is usually called "dolmadakia yalanci" ("fake dolmadakia" - yalanci is a turkish word)!
Living together with Greeks and Turks for 600 years caused many interactions. So they they teached many things to eachother. That created a wonderfull cultural diversity. We are lucky indeed. By the way; "Dolma" means in Turkish: Filling something

I laughed when i saw the bici bici. When i was a small child visiting Turkey with my parents, me, my father and brother would go into Adana and get bici bici. But i was a skinny little kid and couldn't finish it. So many years later when i went back the old man recognized me and said i'll give you a small plate cause you can't finish a whole one.
I feel like I can taste the flavors through the screen, I love your honesty when it comes to food which you don’t always find nowadays.

Dolma is almost the same we have in Greece (me call them "dolmadakia", which means "small dolmas"), in both versions (with meat or without, just rice & spices). The veggie version is usually called "dolmadakia yalanci" ("fake dolmadakia" - yalanci is a turkish word)!
Yalancı dolma is without meat
I like yalancı (fake) dolma more than dolma/sarma with meat or fish or pulses :)

Living together with Greeks and Turks for 600 years caused many interactions. So they they teached many things to eachother. That created a wonderfull cultural diversity. We are lucky indeed.
