Because then if someone is only interested in the thumbnail, watches it, which would only be for the first 30 seconds of the video then they wouldn't watch the rest of the video.
They would be useful in second level construction. For instance you want to pour a slab on top of an underground parking lot, that lot can only have so much weight put on top of it. Often the grade will be filled with huge styrofoam blocks, covered with plastic. Those forms would negate that process.

Uhhh, filling expansion joints with sand (6:52 in the video) is a really bad idea, they will become fixed joints - the sand settles and becomes solid, and they concrete slabs will crack. This was done as a form of sabotage by a subcontractor on a swimming pool of someone I know. The expansion joints locked up, doing enormous expensive damage to the coping of the pool.
Their script skipped the foam tube that was filling most of the expansion gap, the video showed only a relatively small amount of sand being put into the gap below the foam and sealant
