Is it possible to make the chat horizontal? I swear I cannot find that option anywhere

If there are two long messages in a row it it goes out of the screen. How do I fix this without making the chat box infinitely wide?
Missing how I add the widget to OBS, would have been helpful
You don't have to add it to OBS. You flip the switch on for the Chat overlay. As long as you have the Mix It Up overlay on OBS, then it'll show when you or other users chat.
