Our definitions of a ripened banana are completely different... 🤣I know you don't like the flavor of them, but my idea of a "ripened" banana is a dark and scuzzy one... Lol! I don't get cakey cookies when I use them. Even though you enjoyed the texture the way yours came out, it really has me thinking.. I've reduced the moisture in pumpkin puree before for cookies by caramelizing it on the stove (so they don't turn cakey), so I can imagine it working in the same way for mashed bananas... 🤔And that would concentrate the banana flavor and give it a toffee-like flavor too! Ooooh... Time to put bananas on my grocery list 😆
I wonder what else is there in the Mexican section of Walmart, would be cool to see! I love banoffee pie. I have Ben&jerrys banoffee pie in my freezer right now
Is American cream cheese salty? I always see it used in American recipes but I don't think it's used in Europe in deserts, we usually use something like mascarpone or ricotta and out cream cheese is salty, savory, I feel like even if you added butter and sugar it would still taste rather savory

I wonder if subbing the banana for apple sauce would solve the cake texture. Especially since you don’t taste the banana anyway

No, it’s not salty.
Our Bonoffie pie here in the UK has got bananas on the top with the caramel very sweet. Thay look so good thanks for sharing x❤
You could add a slice of banana on top for decoration.
