I use that same kind of garlic in the jar. So the trick to adding it into oil is to spoon it into a paper towel and press it dry before adding it into hot oil. I use it to make shrimp scampi by adding it to oil, white wine and butter. I also find that if I cook it in the oven with a tight cover, I can use a lot less butter and oil.
