    I find dark brown sugar works better than other sugars in dishes which call for pungent sauces like Soy and Fish. If you can get your hands on "muscovado sugar" it works exceptionally well in these types of marinades. It adds a complexity of sweetness which doesn't simply taste like "sweet", but adds a dense caramel flavour which serves as a uniting flavour instead of an "uplifting" flavour.

    I just tried this recipe and it was GREAT. I substituted shichimi togarashi, for the black pepper and served it with white rice, Takuwan, Sichuan style green beans and Japanese style pickled cucumbers. Thank you for another great addition, to our "menu". 🤗

    I made the coconut rice last Saturday and it was great. I had to add about 10 minutes to the cook time because I used the brown rice and did not soak it, but the flavor was awesome. Chef John is so up skirting this cut of beef that it is on my agenda for this weekend (with homemade hoisin).

    We made the Hoisin Skirt Steak and the Coconut Rice for dinner. omg, great combination! These recipes are keepers. Thanks, Chef John!
    The skirt steak was $26/pound at Draeger's market. Might try flank steak or another less expensive steak next time. The hoisin marinade should make almost any cut taste fantastic.

    Hey Chef John (and all cooking lovers of course), I wish to share with you a bit more about Hoisin sauce. The sauce is made with Sweet Potato, Sesame Paste, Red Fermented Tofu, Salted Chili, Garlic, Chinese Spices (Secret, but won't be more from the basic spices), Flour Fermented Blackbean, Sugar, Caramel, and Starch. It is a lot more popular in the Cantonese area of China, but it isn't considered an essential sauce in the basic Chinese kitchen so there won't be much time you see them (especially in other parts of China). In most of the case, this sauce is used in the restaurant to create secret recipes. In fact, the name "Hoisin" means "Seafood" in Cantonese and btw "Haixian" in Mandarin.

    Hoisin sauce is generally some sort of starch, plus fermented soy beans (or soy sauce), sugar, garlic, chilis, vinegar, sesame something, and chinese 5-spice. There are lots of different versions, but that's the basics.
    P.S. Actual mongolian food involves a lot of lamb/mutton or goat, the "mongolian" beef or whatever that you get at some chinese places was actually invented in taiwan. A mutton dumpling is a common mongolian dish that's very good. And I've always wanted to try Khorkhog.

    So, I couldn't find skirt steak in my local grocery stores (I've since sent a scathing email tho my township officials), and picked up some Denver steaks. Exactly the same, just different, right?
    As it turns out, Chef John is the Scooby-Doo of what to do!
    I followed the marinade to a tee, only I let them get soak for six hours because of the different grain structure and density. I also cooked them over super-hot coals ~4-minutes per side as directed...
    WELL! The end result was the tastiest most succulent, Asian inspired beef I've ever cooked!
    I also followed my new ninja cooking senses and served it with the coconut rice. Also followed to a tee.
    UN-believable!

    If I had another 'Food Wish', I would love to have the skills to produce a super-hot curry...The kind you have to sign a waiver to eat.

    Once I found out how well porkchops dance with hosin sauce, have to put it on porkchops before cooking
    I do use hosin alot with beef 😋
    Any stirfry, chicken or vegetarian

    Looks delish!! I'd add that it helps to let the marinated meat sit out for 15-20 minutes before throwing on the grill.

    This was very good and familiar for YamYam-stake-noolde connoisseur. The taste was a bit on the sweet side for the Finnish taste. I added cayenne for the yoghurt-lemon sauce for the heat.

    Chef John's mojo steak is another awesome recipe with skirt steak! I cooked that a ton of times last summer and if it wasn't the video I would never know there is skirt steak (which is almost my favorite now...Ribeye is just too good to go behind anything...)
