You can make smoothies with the spinach! Or put in an egg scramble with some cheddar cheese. You could also make egg bites and then freeze them.
The smoothie thing is such a good idea! I used to make smoothies all the time but I’ve gotten out of the habit and that was a good reminder! Freezing egg bites so that the spinach doesn’t go bad is also a really good idea!
I love leftovers, too. Almost more than the original meal! Buy a box of spinach (pre washed) and throw it in the freezer- always ready for smoothies, soups, etc. and doesn’t go bad! ❤
That is such a great idea!! I need to start doing that. I love making soups. Someone else recommended it for smoothies so I wonder if the frozen spinach would work well for those too!

What kind of transplants will your Dad be giving you? Once a friend gave me a whole wheelbarrow full of Day lilies, which I treasured every year when they came up; as you will your dad's flowers. I was getting hungry as you were describing your "nana" pudding! I like it better after at least one day, too. Your kiddos probably LOVE it! Enjoy the rest of your stay-cation with hubby...hope you get a lot done : )

@@asmrnorth The nice thing about Day lilies is that for a small start-up cost, they will pay you back every year with more and more; to the point of having to thin them out!

Your gro lists are my favorites!! Although I also loved your post card series. I thought the background sounds were so happy they didn't interrupt at all ☺️. As for spinach, when I was really little it was one of the few things I liked, sauteed down to a wilt in butter, then VINEGAR. I loved apple cider vinegar on it. I still love spinach this way except I like just a little balsamic vinegar instead of apple cider , but apple cider vinegar is supposed to be good for you. Another way I love spinach is to gently saute it in butter or olive oil, then top with feta cheese and let it melt into it a little. (Or goat cheese). Then a spritz of lemon juice when you eat it. Takes only a few minutes to make. I have found that the big plastic containers seem to have fresher spinach than the bags. The produce people usually can tell you what day they get delivery, so you can get freshest.
I don't know what Greek yogurt you use, but I'm in love with Fage, the rest just don't seem as good -- but the highest level of fat one, not the low fat. It's the blue container.

Oh one other thing I love. every year I get at least one of the small containers of the dark purple petunias -- the old fashioned ones, not the "wave" ones or other hybrids. The old fashioned ones smell crazy good on summer nights. I just pot one or two or three in different pots (you can get a flat of them) and put them on porch or steps or wherever there is sun. They bloom all summer and late into fall and just smell so wonderful to. I have done that when I no longer have any garden, so I at least still have some flowers. 💜
Oh also I don't remember you doing the taco recipe before or the Mexican rice. I'll have to look, but if you have a link, I'd love to see it
