    To always have ginger in my house I slice the ginger, put the slices in a jar, pour sherry over it to cover and store in refrigerator. As I use the ginger I add more slices. If the sherry gets low add more sherry. I also use the sherry ginger liquid for stir fries, salad dressings, etc.

    My first ferment! I used a bunch of huge mint leaves on the top (cut back my overgrown garden mint last night) to hold the carrots under the liquid.

    4 cups shredded carrots (~12), 1 tablespoon grated ginger, mix and pound, 1/4 cup starter liquid, 4+ days

      Plus 1 tbsp of salt......if you don't have starter liquid you need 2 tbsp.

      @@terbangkeawan6913 a starter culture is any liquid that has lactobacillus bacteria, such as the brine from any lacto-fermented product (such as sauerkraut - but make sure, if you use store-bought, that it's naturally fermented), or you could also drain plain (unflavoured) yoghurt and use the whey.

      @@ngikengding6694 I'm honestly not sure what that ratio would be, but the name of the company that makes the product is Oregon Brineworks, so you might be able to look them up and find that ratio that way.

    When I eat fermented foods that are on the salty side I just rinse it off a little before eating it.

      The salt ensure that only good bacteria will grow, but with a starting culture, you already have much good bacteria there, and by producing acid, those bacteria hinders the bad bacteria from growing.

    My family loves lacto-fermented dill pickles so I will try these with a bit of the starter from those. Looks delicious and carrots are just starting to be ready in the garden.

    I've got my continuous Kombucha up and running at the beginning of this year and it is very good. You have helped get me excited about fermenting vegetables and can't wait to start.

      Boil 7 C water dissolve 1/2 c sugar and brew 4 black tea bags..cool..pour in large glass container. Add 1 bottle of GT synergy store bought kombucha..wait 4 weeks

    Loving your video's, I make my own sauerkraut, pickles, chutney and kombucha. I'm interested in what you use for your kombucha. I use rooibos tea and raw sugar with a second ferment with lime and freshly grated ginger. I call it my new wine of choice. We grow our own lime but yet to grow my own ginger. Love the garlic fermentation and will definitely try it as I use a lot of garlic and dying to try the ferment tomatoes. Thank you for all the work you put into your video's, so helpful. Haven't tried your bread making yet but I was wondering how you grind your own flour. You have great tips and so looking forward to trying them all out. Thank you.

      Jan Jopson you can buy Einkorn wheat berries on Amazon and on their website Jovial foods if your interested in eating ancient grains,. Amazon has some affordable grinders. I seem to be sensitive to gluten, in conventional wheat but have no problems when I eat Einkorn wheat. with it. Which is still new to me and a learning curve on using the flour.

    I've never done a ferment mainly because I'm not a huge fan of sour flavors but do a couple times a year. This is a recipe I would consider for my first ferment. Thank you

    I have been very interested in recent months about fermenting. However, after watching only a couple of videos I was very concerned about the amount of salt being used. My husband loves sauerkraut and has been such a blessing to me in getting some gardens set up the last two years that I wanted to focus my options on preserving some special things I knew he would enjoy. However, he takes blood pressure meds and has been told to reduce his salt intake so now I’m wondering if this is such a good idea after all. I think you’re the first to actually mention the excessive salt taste and I appreciate it. I know this video is not a new post and you may not even see this comment but I just wanted to thank you for the video and for mentioning the ‘saltiness’. I will have to do some more research before I dive too deeply into this.

    Thank you for describing the flavor as well as letting us know good ways to eat it. For those of us unfamiliar with fermented foods beyond sauerkraut that is very helpful.
    Most you tubers who do food videos of any time will say the exact same thing when tasting the finished product; this tastes amazing. I would like to ban the word, “amazing” from most TH-cam videos.

    Great video, you where easy to listen to and easy instructions, thank you for sharing. I’ll definitely give this recipe a try. I like eating and drinking fermented foods, my husband is a different story. He doesn’t like pickles or any sour foods, he even doesn’t like olives.

    Having largely gone over to the low carb/keto way of things, having a token amount of starchy veg like this is something I can reasonably accommodate. After all, enzymes and pro/prebiotics are definitely the way to go.
    So, for the pointer, I doff my cap respectfully and look forward to rekindling a love for a much maligned veg I too often steer clear of nowadays.

      Carrots isn't very starchy. You can eat carrots on a keto diet. Especially raw.

      @@oysteinsoreide4323 I'm not unknown to use a potato peeler or spiraliser to make them more voluminous. The days of me eating them in the quantities I did are in the past
      But, you're right, in reasonable quantities. It's a question again of where you want your 50 grand or so of net carbs to derive from.

      @@robertrowan9893 there are carbs in carrots, but its far from as starchy as potatoes. And the net carb amount isn't something I calculate. I have just checked that I'm in ketosis from time to time. And going out of ketosis for a day or two from time to time isn't an issue. Especially now as I'm on the weight that I find appropriate for me. I must not become too skinny. The most important is to eat so most of the energy come from fat. And don't eat things that makes big insulin spikes. Raw carrots are fairly low glycemic index of 16. So it's not an issue as long as you don't eat a kilo of them. Having 50 to 100 grams of carrot in a salad is perfectly fine.

    This is fascinating - I lost my whole carrot crop along with all of my brassicas this last summer to caterpillars - but I am going to try again with the carrots this year and if I manage to harvest any I will try this recipe - thanks! Xx

      Try getting a couple of ducks. I live in a caravan in a _huge_ farm garden and there are about 40 ducks - we don't know what bugs and slugs _look_ like!

    I've been doing krautz for years. I don't worry much about making sure everything is fully immersed. Have never once out of hundreds of pounds made had any mold or anything happen. Once the ferment starts, don't ever move it. As the carbon dioxide is released it displaces the oxygen as it's heavier, hence don't worry about molds. Just don't move the ferment as that could allow oxygen back in. I put a canning lid on with plastic twist lid over that, loose enough for venting. After a month or two, tighten, and moving is fine, oxygen can't get back in.

    Hi I'm starting to eat fermented vegetables it helps a lot in my gut, before I used to eat oily food and some sweet foods but now I realized my health is not geeting any vit.
