I just saw a tip from another channel (Marion's kitchen) saying that the best way to prevent the noodles from sticking is to soak them in room temp water for a few minutes before cooking. Hope that helps!
Using whatever choice of measuring tools depending on how much you want to make. But that same measuring utensil measure out 4sugar, 3water, 2 lemon or lime and 1fish sauce. Add your amount choice of 🌶 and garlic crushed or diced. For darker color you can caramelize your sugar.

Secondly, you went on to say that you don't see peanuts in Vietnamese cuisine. Yes you do. Mi Quang, Bo La Lot, Hen Xao to name a few.
