hey there! there is no animation involved for the text. Just some simple masking and rotoscoping

Use after effects, he made this animation in blender but used element 3d to get a smoother flow with the animation and the transitions.

The literal title of the video is called Product Animation in Blender: Phone.
The tutorial is done by a channel called Derek Elliot. Whom also does tutorials on other commercial themed blender projects. Of course the phone in his commercial isn't an iPhone but a make-believe product called the "DerrkPhone". It's still a good tutorial.
I'm gonna come around to doing his tutorials but it's alright if you can't be bothered (I mean you just click on the link and look for yourself) or suspicious of the link (even though it's youtube and not some 3rd party site).

Probably 2 different shader trees joined by a MixShader node, animating the Factor value between both. At least, that's how I would do it.
