Here's one thing, making proper corn beef is to steep it overnight to lift the salt as it's very salty and cooking or in an oven makes it dry so you boil it for about an hour or two, this will break it down and get rid of it's salt and make it nice and crumbly

This is what Irish immigrates ate in the United States. In Ireland lamb is eaten. Being in the US I fix this for dinner. I find it amazing how the potato has made it into all the way around the world. Maybe, a lesson on where the potato came from would be interesting.

Soda bread is another traditional Irish food - flour, salt, buttermilk, and baking soda. Some put in raisins or currants. But a big chunk of slow cooked corned beef with gravy over a bowl of champ (mashed potatoes with black pepper, butter, and green onion) or colcannon really hits the spot on such cold dank days as we have in mid March. And for those that do drink alcohol, there's always Guinness.

A bread pudding or fruit cobber type of dessert seems more on the mark.

Corned beef that’s red is from supermarkets and is full of added nitrites to keep it that way. Natural, home made or from a good local butcher it is brown or gray. There’s no such thing as rare corned beef, you have to cook it for hours until it’s tender.

Proper corned beef has no nitrates at all, just salt and spices, sometimes with a little bit of sugar. Only the processed stuff has nitrates but at least here in Ireland that's usully not what sells in butchers. It's possible to get canned stuff that's ready cooked, usually from a can, that has nitrates.

Corned beef and cabbage is more of an Irish-American thing. Irish immigrants lived near the same neighborhoods that the Jewish immigrants did, and they both bought food from the same stores. Lamb is more authentic, but corned beef is cheaper.

@@nateman10 You know all those swirly patterns on Celtic designs? Well thet's what happens when you have roast potatoes garnished with shrooms from the local woods. Boxty is also a favourite for puttin' hair on yer chest. The French stole dauphinoise potatoes from us but we forgave them because they kicked the shit out of the English for 100 years in return. The Belgians stole chips from us but we also forgave them because they sent us so many forms to fill out when we asked them to pay that we gave up and we all went to the pub instead. That was a sad looking plate of corned beef and cabbage, personally I slow roast it instead of boiling. I'll take the corned beef brisket and thinly coat it with mustard and horseradish and put it in my porcelain baking dish with chunks of carrot, celery, onion, cabbage, and potato (sometimes I use sweet potatoes which works surprisingly well). After a couple hours in the oven you get moist and pink beef with soft veggies that have all been steaming in each other's flavors.

Only one of these dishes was Irish, and that was not what it was named as during the video. The pundies should have been with the meat and veg. Nobody sits down to a plate of pundies by itself. Any wonder they weren't keen on it. There should have been good butter and plenty of fresh black pepper as well.

Corned beef is made from beef brisket. Corned is the term used for brining, spicing and aging the brisket. Tinned or canned Corned beef is made from overcooked and finely chopped Corned beef and is suitable only for sandwiches and hash where a whole Corned beef is the star of the meal.

I'm Irish and have never eaten corned beef and cabbage. Nor do I know anybody in 48yrs to talk about eating it. It must be some American thing made up to sell more corned beef and cabbage.
What you will find is cabbage, pundies and either pork or lamb. In this case, lamb or beef would have been fine, but definitely no corned beef. That is a mock Irish dish, that simply is not eaten here in Ireland. Maybe if you're very poor.
