How to Make Sour & tasty Lavashak at Home

  • Ingredients:
    3 KG Mirabelle Plums or any other type of plum
    1 cup of dried Barberry
    1 full teaspoon of Salt
    1 glass of Water
    Preparation:
    Wash & dry the plums and add them to the large cooking pot. Place it over high heat; add 1 glass of water; add the dried barberries; cover it and let it boil. Once start boiling, give it a stir and mix them very well; at this stage lower the heat and uncover the pot and let it continue to boil. keep stirring until all the plums are crushed; then remove the pot from the heat and let it cool down in room temperature. Once cooled down, smooth the plum using a sieve. pour some of the plums inside the sieve and using your hand squeeze the juice out of it and you will end up having a smooth plum condiment. Add 1 full teaspoon of salt and mix it well. you can use this condiment in 2 ways. You can keep in in a jar refrigerated in liquid form and use it for cooking purposes or you can sun dried them spreading them over a tray and have it as a snack. This condiment has sour taste and is very good for metabolism and digestion and is very healthy.

    wow thank you, ur amazing! can I add cherries instead because I cant find those plums, but I still want to make sour lavashak. and also the lavashak I tried back home is very sour almost kinda spicy when eating try to much, how do I make it like that? thanks a lot :)

      Thank you :) yes you can use cherries or pomegranate as well or normal plums. for very sour lavashak I believe they add dried citric acid. you can do it if you want.

    Hello from Istanbul!
    I was wondering what type of tray I could use to dry this liquidy paste to dry? and I am afraid it may stick to the tray
    Thakn you for the recipe.also. We here usually make it with fruits and it is sweet not sour...I want to give it a try!

      you can use any type of plum but the best one is green, Mirabelle plums which is widely available in Istanbul during summer, always cover the surface of the tray with cling film and them spread the paste, don't spread the paste too thin as when it dries up, it get thinner

    I’m not sure lavashak is healthy. It’s delicious but healthy….. arguable ( really high in sugar)

      Only unhealthy if added suger and/or in excessive amounts.

      @@carriellove5681 When I get it i cant control myself....honestly my fave is when I was a kid visiting family in Iran...the types over there were so sour IT BLEW MY MIND! but I LOVE IT!! I MISS IT SO MUCH!!Q :(
