- 500g lamb or mutton cut into cubes
3-4 tablespoons oil
2 onions, finely chopped
2 tomatoes, finely chopped
1 tablespoon ginger paste
1 tablespoon garlic paste
2-3 green chilies, slit lengthwise (adjust to taste)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon cumin powder
Salt to taste
2-3 tablespoons achar masala (pickle spice blend) - available in stores or homemade
1/2 cup yogurt
Achar Masala (Pickle Spice Blend):
1 tablespoon mustard seeds
1 tablespoon fennel seeds (saunf)
1 tablespoon fenugreek seeds (methi)
1 tablespoon cumin seeds
1 tablespoon coriander seeds
5-6 dry red chilies
1/2 teaspoon turmeric powder
Dry roast mustard seeds, fennel seeds, fenugreek seeds, cumin seeds, coriander seeds, and dry red chilies until aromatic.
Grind them into a fine powder.
Mix in turmeric powder,
