    Rice
    2 loaves of white bread

    Chocolate covered pomegranates
    String cheese
    Bbq sauce
    Potato chips
    Italian dressing
    Black olives
    Bologna
    Pepper stir fry
    And polish sausage
And here is the full list of meals as well as the corresponding episode to reference for the recipes.
Episode 1 covered day 1, I made banana baked oatmeal, grilled cheese with tomato soup, and chicken with roasted vegetable and Brussel sprouts
Episode 2 covered days 2 through 5, in this episode I used the leftover vegetables from dinner to make a pureed vegetable soup, I also shared a potato and egg breakfast skillet which quickly became a favorite throughout the series, and I made country fried steak
Episode 3 was finishing off the last couple of days of the first week, in this episode we made burrito bowls, homemade flour tortillas, and cabbage rolls
Episode 4 covered the entire 2nd week, in this episode I made a baked chicken alfredo pasta, I finished off a lot of leftovers, I prepped a batch of breakfast burritos as well as some Starbucks inspired PB&J Boxes, and i cooked up the pork loin which I used to make BBQ Sandwiches
Episode 5 was days 15 through 18, in this episode I made pasta salad, chicken sandwiches, and a vegetable soup from scraps I had been saving and freezing
Episode 6 was days 20 through 25. I made a breakfast casserole, pork chops with baked potatoes and green beans, and I started to revisit some earlier meals that I had prepped and frozen.
And that brings us to today’s episode, finishing out the series. I also have made a playlist for all of the episodes in this series.

From the $Tree: Rice, Lentils, a can of tomatoes and a pkg of Polish Sausage.
I would cook rice with some lentils (adding extra water for the lentils) add the crushed tomatoes after the rice is cooked. Serve it as a side for the Polish sausage. You would have enough for 2 or 3 meals. I have actually made this and it was a nice change of pace meal.

I make SOS allot. I’m sure you know what this is but in case you don’t…
      1 lb ground beef
      Tbs of flour
      Water or milk..I use water
Brown the beef. Add the flour..cook it til the raw taste is gone, add water and bring to a boil. Serve on bread or canned biscuits. It comes in a little over or under $5. Depends on where you shop. This is one of my favorites!!

Not dinner but I like for breakfast and lunch. Blender muffins. 3 ripe bananas, 3 Tbsp pb, 2 eggs, 1.5 tsp cinnamon, 1.25 cups oats, .5 tsp salt, 2 tsp baking powder, 1 Tbsp honey. You can also add in fruit. My favorite is diced dates because it kinda tastes like caramel. You can also do flax eggs for vegan. Put all in a blinder and the bake in muffin tin at 350 for about 22 mins

I think the most genius idea of the series was your squirrel fund! It kept you from getting tired of eating the same thing multiple days in a row and it makes the tight budget not feel so limiting IMO.

The extra stuff you used is in most people's pantry anyway. So I don't think you did anything wrong. You are awesome, and this really helped 26 of my clients learn you can eat on $100 for the month. Many were able to get even more food due to the area they live in, which has multiple food stores, and I was willing to take them to them all.
I got to teach them how to check prices at multiple stores, make a list for each store with the listed price in case something was less at another store than we cooked together every week. So from the bottom of my heart THANK YOU!!!

Rebecca's meal ideas to stretch $100 should be put into mini booklets and passed out with food given out at food banks. Not everyone has internet access, especially when food is so expensive now and comes first.

Also, if your clients get food stamps, many farmers' markets give 1.5 times, so if you get $5 in produce, you get $2.50 free when using the EBT card. The state website for EBT and other services will point you to the places that do that. If your clients are mobile, it is a great way to stretch the money even more.

It also just crossed my mind that a lot of people probably throw out $100 worth of food per month, just on waste. Produce they meant to get to but didn't use before it went bad, or leftovers that no one ate up. That can really put things in perspective when thinking about how much we "need" to get by and how to live more consciously. That's something that will benefit anyone, regardless of their income!

Quick tip, everyone: on a recent shopping trip, after glaring angrily at the per pound price of the "cheap" rolls of ground chuck, I did some extra browsing and discovered the frozen burger patties (even the small 3lb packages) were cheaper per pound, when it's usually the other way around. Worth a quick price check at your local Walmart, in case it's the same for you.

    • @margeebechyne8642
      @margeebechyne8642 หลายเดือนก่อน +9

That's what I recently discovered, too. I like the 85% burger and that is way too expensive fresh. Picked up a three lb container of patties at a great price. And I don't have to use them as patties or even use a whole lb at a time. Each patty is 1/4 lb so it is easier to make a small meal.

If you have a bulk store (or store with a bulk section), you could look into getting spices in bulk and getting a small amount of a bigger variety of spices (but only a little of each) to add a bit more variety of flavouring next month.

I expect my meals will look different from yours, as I am diabetic. But you have inspired me to BELIEVE THAT I CAN DO IT!! The icing on the cake is how you included your full food list and meals. I can't thank you enough for the tremendous amount of effort you put into this series. Diane

Great job! I have to say from experience it is a lot easier to succeed with $100 doing it the way you did, I finally realized that, having $25 in your envelope for the week is hard, but having the $100 upfront gives flexibility, I’ve done this challenge myself, I have a BIG advantage as I work in a grocery store and hit the mark downs everyday! I would say 90% of my food is markdown, it blows my mind the number of people who won’t touch something marked down, I don’t buy it if it’s icky looking! Looking forward to next challenge,

Bravo young lady. You are a treasure. It's so nice to see someone help the hungry. I grew up in south Texas, we didn't have much but mom always had a fresh salad, one fresh vegetable side, rice and beans, plus a little bit of meat. Mom had to feed six kids on a carpenters pay, which back then was doable. Skilled blue collar workers were paid better back then, now days not so much. I feel sorry for the young folk these days. Everyone had a big garden canned and made do. Once again job well done.

I loved this series! I learned a lot. I'm gluten free and non dairy. I have trouble with meat and eggs too. I made oat milk and used it to make cream of rice. I also ground the rice myself! I mixed in diced apples and raisins, it was pretty good and very inexpensive. I bought garbanzo beans, cooked them in the crock pot, refrigerated the whole pot and divided it into 4 can sized portions. I made hummus, soup, crispy snacks and peanut butter bars! I used the bean water (aqua faba) to make vegan mayo, as egg replacer in pancakes and muffins and a few batches of meringue cookies! Everything I eat is from scratch, gluten free and non dairy, so I budgeted $150 and made it 3 weeks. I learned a lot about making my own ingredients. Thank you for all of your hard work. You really are an inspiration, please please please keep doing what you do!

I blitz 1/2c of white or brown rice in my smoothie maker until its tiny little balls then I lightly toast it in a bit of margarine in a saucepan and then I gradually stir in 2 1/2c of soy milk & water (takes about 25 minutes at high altitude), STIR frequently!!! Then I add in some sweetener & vanilla. I store it in the fridge for 4-5 days. I typically scoop out 1/3c, heat it up in the microwave, add additional soy milk and whatever fruit I have on hand. So much cheaper than a box of cream of rice cereal! I hope you try it and like it!

If I can make a suggestion, if your $Tree has Cranraisins (4oz pkg) they're a great pantry item. I like to add a few in the water of my oatmeal along with a pat of butter or margarine. They get nice and soft while the oatmeal is cooking. I add a bit of cinnamon at the end for a hearty fruity oatmeal breakfast.
(FYI: adding a pat of butter or margarine to your oatmeal will avoid feeling hungry an hour or so after eating. It's a trick my mom used to do when I was a kid.)

Indian recipies can be great because they are often vegetarian with a variety of beans/legumes (so, cheap and nutritious). And if you use a spice mix, instead of investing in individual spices, in can be pretty cheap.
Korean style eating can also be a great way to achieve variety in flavor over time. Koreans keep a variety of flavorful side dishes in their fridge that they can mix & match, adding to as time goes along. The rice is the constant. Often with a soup or stew.
The Korean style reminds me of how my midwestern mother would feed us in the summer time. She would always have cucumbers & onion in vinegar in the fridge, maybe bean salad, cottage cheese, tomatoes and cucumbers to be sliced and eaten raw. Pre-made items that don't need attention at meal time.
My mother was often using up produce from our garden or neighbors. It might be worth discussing some of these nongrocery store ways of feeding oneself. Buy nothing groups, road side stands, private or community gardens, I know you have already done some work with a food pantry. Sometimes it can be challenging because you might come into a bushel of apples (for example) but how do you process them so you can use them months later?
I love your content. Keep up the great work!

You honestly have no idea how much help your videos have been for me.
I wish that I could do more of these ideas because I am on disability and have a very limited income.
Because of issues with my coordination due to my disability, cooking is very hard for me. But, I have had the courage to try a recipe or two on here, and it made me feel so accomplished.
I am hoping that I can try more easy and cheap recipes in the future, but budgeting for groceries is hard with rising costs, so you definitely have my respect for doing it.
To be honest, even if you had come up short of your goal, I would still be in awe of what you have accomplished.
When you originally started this series, there was a little voice in the back of my head saying that there was no way that anyone could realistically be able to pull this off eating three meals a day.
However, as I watched episode after episode I was really pulling for you to make it, and I am so happy that you did.

    1) box of complete pancake mix
    2) powdered milk ( cheaper than regular milk)
Make the pancakes according to directions. Into the water to make them, sprinkle some of the powdered milk.
Grate a sweet potato or zucchini, or add a spoon of pumpkin ( use the rest of the can for a different recipe) or a spoon of mashed banana into the batter. ( don't put much or the pancakes can stick)
