I think the most genius idea of the series was your squirrel fund! It kept you from getting tired of eating the same thing multiple days in a row and it makes the tight budget not feel so limiting IMO.
The extra stuff you used is in most people's pantry anyway. So I don't think you did anything wrong. You are awesome, and this really helped 26 of my clients learn you can eat on $100 for the month. Many were able to get even more food due to the area they live in, which has multiple food stores, and I was willing to take them to them all. I got to teach them how to check prices at multiple stores, make a list for each store with the listed price in case something was less at another store than we cooked together every week. So from the bottom of my heart THANK YOU!!!
@TaraanBudgetandSelf-Care your comment deserves more attention - it's like you and Rebecca tag-teamed your 26 clients to give them the best survival skills. Total win!!!
Rebecca's meal ideas to stretch $100 should be put into mini booklets and passed out with food given out at food banks. Not everyone has internet access, especially when food is so expensive now and comes first.
Also, if your clients get food stamps, many farmers' markets give 1.5 times, so if you get $5 in produce, you get $2.50 free when using the EBT card. The state website for EBT and other services will point you to the places that do that. If your clients are mobile, it is a great way to stretch the money even more.
It also just crossed my mind that a lot of people probably throw out $100 worth of food per month, just on waste. Produce they meant to get to but didn't use before it went bad, or leftovers that no one ate up. That can really put things in perspective when thinking about how much we "need" to get by and how to live more consciously. That's something that will benefit anyone, regardless of their income!
Mad respect for you. The amount of planning, prep work, and dedication that went into this is crazy. You are truly helping people, and I really admire you for that.
I typed a really long comment singing praises on how much you put into this series to make it a success. I hit the wrong button and it disappeared. 😵. So for a very shortened version, you should feel very proud of yourself and the work you do. You DO make a difference in people's lives. How amazing is it to realize that??? So thank you for being such a phenomenal young lady and a kind and caring human being. 🤗
Quick tip, everyone: on a recent shopping trip, after glaring angrily at the per pound price of the "cheap" rolls of ground chuck, I did some extra browsing and discovered the frozen burger patties (even the small 3lb packages) were cheaper per pound, when it's usually the other way around. Worth a quick price check at your local Walmart, in case it's the same for you.
That's what I recently discovered, too. I like the 85% burger and that is way too expensive fresh. Picked up a three lb container of patties at a great price. And I don't have to use them as patties or even use a whole lb at a time. Each patty is 1/4 lb so it is easier to make a small meal.
@@margeebechyne8642this is actually a great tip bc I usually buy ground beef and bag them ziplocks and squish them into pattys. I use them for everything but also if I want to make a quick burger I can. This is basically buying them already like that.
@@saucegotti9416 Yes. Premeasured for me. Makes dinner so much easier and being flat it thaws out quicker. I usually get it at Walmart which gives me a better price than most regular supermarket, unless they are having a sale. Hope it helps!
You should save the Non perishables left over from this time and allow them in the next $100.00 challenge. Show how even the smallest rotating pantry is a benefit.
I was going to comment the same thing. Next month Rebecca should use items left over from July if needed or wanted as very few people have a completely empty pantry or spice cabinet.
My husband is a grocery store butcher. He said for his store the best time to go look for marked down meats is Friday mornings. That's when they mark down and clear out the shelves in preparation for when people shop the most which is Saturday morning/afternoon. Hope this helps. 😊
I thank you so much because at 72 I'm having live on my Social Security. It is very very tight. I did just get $41 in food stamps. I'm actually less stressed now seeing how you manage. I wish we had a better Dollar Tree in my neighborhood. I really like Ramen with the egg roll on top the best. I've tried almost everything you used if I could find it in stock. So I'm out here waiting anxiously for next month!
I’m really trying to succeed at $25 a week food budget. Your videos are making me look at my budget thoroughly. Sticking to actual serving sizes is key for me, but I struggle with fearing that I’ll be hungry. I’m new to this, just a week along, but I’m feeling positive.
I am also a volume eater and I always have baked potatoes and canned corn on hand if I'm not feeling full. If you don't put fattening stuff on them they have a lot of nutrition for not a lot of calories
@@ScarletFoundryTarot Another way to do that is to have soup at every meal. Or, to eat an apple before each meal if sweets are a thing for you. Or, to have a giant salad with each meal.
I am retired but so very lucky that I am not living on the tight budget that you are cooking for. I did how ever grow up quite poor with a total of 7 kids. These episodes inspire me not to waste so much money and to be even more appreciative of how lucky I am. They reminded me how my parents struggled to feed us and send us all to college. Thank you so much. I really love your channel. You are such a wonderful person.
I recently found you and I already love you so much! When I was in my early 20's I was a broke college student. I couldn't afford to spend more than $10-$15 on groceries weekly. I remember just living off of quesadillas, easy mac, and rice and beans. I love how creative you were with your meals!
There are other budget food channels on TH-cam and then there is Dollar Tree Dinners. Rebecca you are the UNDISPUTED Greatest of All Time and Queen of the Internet 👑 🖥 How appropriate was it that the final dinner was our sweet Clara's Poor Man's Dinner??? We need a better name for that one because while it might be humble ingredients I would take it over some so called Five Star Gourmet junk especially if I was sharing the meal with the Dollar Tree Dinner Family. 🤗❤
She seriously is my favorite. I've watched other budget eating youtubers, but they just aren't the same to me. They are very helpful as well, but I love watching this channel the most ❤
Rebecca, thank you so much for doing challenges like this. Your creativity, thoughtfulness for people of different ability/disability/income/experience/location/appliances, skills in the kitchen, resourcefulness, and patience have all come together in this project and it was great to see. You've given me a lot of ideas and those less fortunate options to thrive without having to just depend on 'beans and rice.' When I stumbled upon your TH-cam videos, I was already cooking. But the way you think in the kitchen (especially with your food service background and budget challenges) has really elevated my game further. I can't imagine how it's helped elevate others, too. Once again I truly appreciate you taking your time and energy to show us this. Keep up the good work!
Thanks to you I saved enough money over the last 4 years to take my bucket list/ dream vacation to Ireland. I even took my breakfast and dinner back to eat in the hotel which was packaged oatmeal and only at lunch out. I stayed in my budget I saved for this vacation, so thank you for the great advice and videos. Keep up the great job
Remember when you are staying in a hotel that serves free breakfast always look in their refrigerator where they keep milk and yogurt and they usually have boiled eggs too. I take milk and boiled eggs back and fix me up egg salad sandwiches or tuna salad sandwiches with just adding some mayo or sweet pickles to it. They also have loaf bread for toast and you can take back a couple of slices of that. I shop before I vacation and add small things from dollar tree that I can add to the breakfast foods and make lunches out of later. It really saves money especially since hotels cost so much now.
@@dorgan96 they didn't have a refrigerator in the room but the breakfast was free and I always took tons of fruit back with me to eat while walking around Dublin and stopped at a local grocery store for something for dinner. The only time I ate out was when I took a all day trip south of Ireland on a bus.
You did an amazing job stretching your $100 budget for the entire month. You had a good variety of meals that were nutritious. Many people rely on inexpensive convenience items when doing challenges like this. Things like ramen or store brand boxed macaroni and cheese. The biggest thing that lead to your success was cooking from scratch using fresh ingredients most of the time. I look forward to your next $100 grocery budget challenge.
Great job! I have to say from experience it is a lot easier to succeed with $100 doing it the way you did, I finally realized that, having $25 in your envelope for the week is hard, but having the $100 upfront gives flexibility, I’ve done this challenge myself, I have a BIG advantage as I work in a grocery store and hit the mark downs everyday! I would say 90% of my food is markdown, it blows my mind the number of people who won’t touch something marked down, I don’t buy it if it’s icky looking! Looking forward to next challenge,
I can't tell you how proud of and thankful to you I am for doing this challenge, and being willing to do it again. ! You not only take these challenges on, your dedication to us, and your intentional hard work is inspirational to me and I'm sure many. We were in a pretty comfortable place, but in one night, that changed. These videos for me have come at a very important time. And so has your reflection and inspiration. So I thank you sincerely from the bottom of my heart. 💗

You are so gracious and I'm sure that's why your channel does so well and why people like you so much. I'm not struggling financially (any more than anyone else, that is; I'm no billionaire!), but I really love budgeting and seeing how low I can get my bills. To me, it's almost a rush to see how little I can live on. Maybe that's because I grew up extremely poor on welfare and food stamps, etc. I've made a very comfortable life for myself and my husband and daughter, but I still have that "scrape to get by" mentality. Maybe it never goes away. Anyway, thanks for what you do, Rebecca! You're a light!
I have really liked this series. What I would have given for TH-cam and a person like you 15-20 years ago when my food budget was almost non existent.... Love your creativity with a limited budget. :)
With all the bad news going on in the world, your channel always brings a smile to my face. I was happy to see your post today. You are so thrifty and creative with making the food stretch within a very right budget! Thank you for sharing!
Yippee! I am really thrilled that you will be doing another $100 30-day meal challenge for August. I plan to challenge myself to do the same. I expect my meals will look different from yours, as I am diabetic. But you have inspired me to BELIEVE THAT I CAN DO IT!! The icing on the cake is how you included your full food list and meals. I can't thank you enough for the tremendous amount of effort you put into this series. Diane
Wow, what a great way to end the series. Thank you for seeing it through even when you felt defeated. So many go through this unfortunate exercise monthly and you have helped so so many. Thank you
This TH-cam channel has become my happy place in the internet! Your videos are always so useful to learn new recipes and new ways to use food and get creative when there's scarcity. I love the way you are so respectful with the way you treat budget meals (e.g. Avoiding to call it a challenge) is just wonderful. I truly appreciate the mere existence of Dollar Tree Dinners! Thank you so much!
Years ago, I visited my folks in California, & when asked what I wanted for dinner, I told my mom what I wanted. She said, "That's a poor man's meal." I told her that some of those were my very favorite meals, & I still make many of them today. I have used a lot of your ideas & my meals are even more interesting, money saving & yummy. Thank you, Rebecca. You are wonderful to watch. ♥
Dried black beans could be good next time. They go a long way. There are so many ways to use them - beans and rice, black bean burgers, baked potatoes with black beans and cheese, black bean soup, corn and black bean salad, quesadillas or tacos, etc.
Bravo young lady. You are a treasure. It's so nice to see someone help the hungry. I grew up in south Texas, we didn't have much but mom always had a fresh salad, one fresh vegetable side, rice and beans, plus a little bit of meat. Mom had to feed six kids on a carpenters pay, which back then was doable. Skilled blue collar workers were paid better back then, now days not so much. I feel sorry for the young folk these days. Everyone had a big garden canned and made do. Once again job well done.
If you’re looking for Asian inspired meals, tofu can be a great, inexpensive protein to try (price can vary depending on your location though). If you have a bulk store (or store with a bulk section), you could look into getting spices in bulk and getting a small amount of a bigger variety of spices (but only a little of each) to add a bit more variety of flavouring next month.
Rebecca, this was a wonderful series, and although you may have felt uncomfortable questioning yourself, if you would make it, its a raw emotion many have who struggle on limited groc money. You provided an "its not just me" concern/worry yet plowed thru with success. BRAVO!
I can see the pride in your face right off. you are truly a blessing and I am proud that you finished the challenge! You are a huge Winner, no matter what. Keep being a blessing showing us reality.
I loved this series! I learned a lot. I'm gluten free and non dairy. I have trouble with meat and eggs too. I made oat milk and used it to make cream of rice. I also ground the rice myself! I mixed in diced apples and raisins, it was pretty good and very inexpensive. I bought garbanzo beans, cooked them in the crock pot, refrigerated the whole pot and divided it into 4 can sized portions. I made hummus, soup, crispy snacks and peanut butter bars! I used the bean water (aqua faba) to make vegan mayo, as egg replacer in pancakes and muffins and a few batches of meringue cookies! Everything I eat is from scratch, gluten free and non dairy, so I budgeted $150 and made it 3 weeks. I learned a lot about making my own ingredients. Thank you for all of your hard work. You really are an inspiration, please please please keep doing what you do!
@@The3Storms It really is. I blitz 1/2c of white or brown rice in my smoothie maker until its tiny little balls then I lightly toast it in a bit of margarine in a saucepan and then I gradually stir in 2 1/2c of soy milk & water (takes about 25 minutes at high altitude), STIR frequently!!! Then I add in some sweetener & vanilla. I store it in the fridge for 4-5 days. I typically scoop out 1/3c, heat it up in the microwave, add additional soy milk and whatever fruit I have on hand. So much cheaper than a box of cream of rice cereal! I hope you try it and like it!
Suggestion…POOR MAN MEAL our kids always looked forward to this meal , all grown, married and they still love it. Brown hamburger, add onions and pork and beans.. We never have left overs. I would have salad or vegetable with it.
For dog owners, a good cheap tip that I got is to add warm water to their kibble and let it sit for a few minutes to rehydrate before giving it to them. It helps their stomachs to break down the nutrients in their food! You can also swap the water for stock if you have it available. I just thought to share this because I saw her cute doggo in the background. Hope you have a great day!
Thank you, Rebecca, for this inspirational series. So many of us are facing financial hardship and facing food insecurity and we appreciate you showing how so many of us struggle to make it each month.
Rebecca, Awesome videos. I have enjoyed these videos & have found some new meals. Money is going to be tight since we learned my Hubby needs open heart surgery & he only has a small supplemental ins policy. These will be some costs saving meals & I thank you for that. Have an awesome day! 😊
I bought my daughter Clara's cookbook 5 years ago when we were experiencing hard times and had come across her channel when looking for inexpensive recipes. Her stories, videos, and spirit are amazing!! Still follow her channel, sometimes her grandkids update in her memory :)
This series helped me and my husband greatly, we looked differently at our food budget and where to get groceries. I found a brazil market 2 blocks from us.
I loved every single thing you made in this series!! It also taught me to start freezing leftovers, it saved us last week when my husband's hours were cut and his paycheck was about $200 less. Thank you Rebecca!!❤ ❤❤
You did great! 🎉 It's so cool that you used one of Clara's recipes. If I can make a suggestion, if your $Tree has Cranraisins (4oz pkg) they're a great pantry item. I like to add a few in the water of my oatmeal along with a pat of butter or margarine. They get nice and soft while the oatmeal is cooking. I add a bit of cinnamon at the end for a hearty fruity oatmeal breakfast. (FYI: adding a pat of butter or margarine to your oatmeal will avoid feeling hungry an hour or so after eating. It's a trick my mom used to do when I was a kid.)
That is amazing! Thanks for doing this, I know it must have been hard on your mental health some. It is taxing feeling like you are stuck with very few options. I love Clara’s poor man’s meal, we eat that just because we like it.
You serve as an inspiration to try to save money when there is more to spend on the budget for food. There's always that one week when you may have an unexpected bill to pay. Those few cents add up to some big savings. Thank you for being such a bright spot in my day😊
You are so inspiring. Due to a knee injury, I can't drive so haven't been able to physically shop at different places as I usually did but I've been really studying my sales circulars for the best prices and combinations to get the most bang for my buck. You have given us all so many great tips and recipes and you are a really caring, kind person who really teaches us in such a practical way. THANK YOU FOR WHAT YOU DO!
I am so proud of you, Rebecca, well done!! And, the recap was excellent. The "squirrel fund" was my favorite inspiration. You are so encouraging and are very much loved by this community. I can hardly wait for August 1st.!❤
this is probably my favorite series that you have done. although honestly i learn so much from every upload you do. :) i'm so glad you didn't spend extra. i know it was suggested by many, but there are also so many that don't have the extra at the end of the month and it was nice to see that it can be done. i love learning from others in the comment section as well. i'm looking forward to the new series in august. thank you again for all you share with us. what you do is so important to so many.

Congrats on completing this challenge! Your creativity is so inspiring! I took your fried potatoes with eggs cracked over them and added it to my rotation. I care for my elderly mom and she loved it. Thank you for foraging ahead with such a challenging budget! ❤
I loved this series. I eat plant based and I really like beans and rice. But I know that I'm a minority. I grew up eating pintos with cornbread and it is still one of ,y favorite meals. Crumble the crispy ot cornbread into a bowl and top with cooked seasoned beans (some mashed where it's all thick like gravy) and eat some sliced raw Vidalia onion with it. Scrumptious! You have given us all so many ideas and inspiration. Thank you!
Oatmeal doesn't have to be sweet. I add salt and pepper and put an egg on top to make it savory. I also add sesame seeds and green onions if I am feeling fancy. Hot sauce would be a good addition too.

Whenever we find pork loin on clearance we grab it and we grind it up in the food processor so we can use it as ground pork for egg rolls, fried rice, ground pork tacos etc. it’s a lot cheaper than buying ground pork itself.

Great tip, thanks for sharing 😊
Oh neat! Thanks for the tip!
@@margeebechyne8642this is actually a great tip bc I usually buy ground beef and bag them ziplocks and squish them into pattys. I use them for everything but also if I want to make a quick burger I can. This is basically buying them already like that.

You should save the Non perishables left over from this time and allow them in the next $100.00 challenge. Show how even the smallest rotating pantry is a benefit.
Great idea!
I was going to comment the same thing. Next month Rebecca should use items left over from July if needed or wanted as very few people have a completely empty pantry or spice cabinet.
Absolutely 💯
Very good idea. That could allow for some extra veg or fruit, perhaps.
nice idea
My husband is a grocery store butcher. He said for his store the best time to go look for marked down meats is Friday mornings. That's when they mark down and clear out the shelves in preparation for when people shop the most which is Saturday morning/afternoon. Hope this helps. 😊
Thanks for the tip.😊
My grandpa was a butcher. ❤
Your squirrel fund in the freezer is a game changer! I am so excited to see your next challenge series in August!
You did an amazing job with this series!!!
I’m really trying to succeed at $25 a week food budget. Your videos are making me look at my budget thoroughly. Sticking to actual serving sizes is key for me, but I struggle with fearing that I’ll be hungry. I’m new to this, just a week along, but I’m feeling positive.
follow her ideas she knows from all her experiences
Plus she keeps u motivated
Meal prep may help - you get to see all your meals/snacks for the week
I truly am not a big fan of fancy food. Just down to earth stuff for the win!
In my house, we call poor man's meal sausage hash or hotdogs hash or whatever. It's always a favorite!
You've given me a lot of ideas and those less fortunate options to thrive without having to just depend on 'beans and rice.'
When I stumbled upon your TH-cam videos, I was already cooking. But the way you think in the kitchen (especially with your food service background and budget challenges) has really elevated my game further. I can't imagine how it's helped elevate others, too.
Once again I truly appreciate you taking your time and energy to show us this. Keep up the good work!
I can't believe you stretched $100 a whole month!
Sooo amazing!❤❤
Thanks to you I saved enough money over the last 4 years to take my bucket list/ dream vacation to Ireland. I even took my breakfast and dinner back to eat in the hotel which was packaged oatmeal and only at lunch out. I stayed in my budget I saved for this vacation, so thank you for the great advice and videos. Keep up the great job
Congratulations
Thanks for helping so many people with your low budget recipes. You truly are THE BEST content creator on TH-cam! ❤️
I’m so glad you didn’t quit!
Looking forward to next challenge,
A package of corn tortillas, a can of refried beans, a bag of shredded lettuce and ranch dressing. I could eat this all day long!
Yum!
@@ScarletFoundryTarot salsa and sour cream!

And it is YUM!!
Thank you for this recipe!
Yum!
Thank you for sharing your recipe. I will definitely make these.
Love fry bread 🤤
^^^^ THIS^^^^
This series was so interesting to watch. I looked forward to what you would come up with, and what worked and what didn't.

You did an amazing job! Can’t wait to see what you do next month! Thank you for all you do!
We all appreciate all of knowledge and hard work. I am very happy I found your channel. Thank you so much!!! I wish you and your family all the best.
Dried black beans could be good next time. They go a long way. There are so many ways to use them - beans and rice, black bean burgers, baked potatoes with black beans and cheese, black bean soup, corn and black bean salad, quesadillas or tacos, etc.
Dried beans are cheaper too!
Add on top of the recipe that someone shared above on indian fry bread oohhh yeah❤ or add a scoop of dt ice cream with cinnamin and sugar....
You have the best rapport with your audience. You are there for them and we are here for you and it all feels real.
Congratulations! This past month has been a testament to your resourcefulness and ingenuity. 👍
Big respect for you. I love how you showed to freeze some for future use. Even though we should know this it's great to see it here.
I also loved seeing how everything froze and reheated after. It inspires me to save more!
I love tofu! It’s less than $2 a package in my neck of the woods.
Yes! Please make hot pot with all the leftover veggies, broth, and tofu!
I live alone now and watching your channel has helped me so much.
I’m a gluten free vegetarian so I feel ‘ya 🙂
Your rice pudding sounds good.
I knew you could do it. Congratulations🎊❤ can't wait to see more episodes
It was a lot of fun following along with you and I've learned more recipes and inspiration! Thank you!!
I'm so glad!
Wonderful. Great job. Most informative and enjoyable
Rebecca, Awesome videos. I have enjoyed these videos & have found some new meals. Money is going to be tight since we learned my Hubby needs open heart surgery & he only has a small supplemental ins policy. These will be some costs saving meals & I thank you for that. Have an awesome day! 😊
Prayers being lifted for your husband and for you. 🙏🏼
@@tracyq989 Thank you very much. 😊
This is the best budget meals I’ve seen. Meat is expensive but you had a lot!
So happy you made it!
I love cranberries in oatmeal!
THANK YOU FOR WHAT YOU DO!
this was such a great series. so creative but yet simple enough for just an average cook (like me). well done!
I think a lot of us have tunnel vision when we are trying to figure out things that are nutritious and are cheap so all tips are appreciated!!
I am so proud of you, Rebecca, well done!! And, the recap was excellent. The "squirrel fund" was my favorite inspiration. You are so encouraging and are very much loved by this community. I can hardly wait for August 1st.!❤
That is another great reason for me to come to watch your videos because the community here is so wonderful.
this is probably my favorite series that you have done. although honestly i learn so much from every upload you do.

Thank you!
I love pinto beans and cornbread!
Congrats to you and this awesome community. You just showed thousands of people that eating like this is very much possible. Thank you again!
Oatmeal doesn't have to be sweet. I add salt and pepper and put an egg on top to make it savory. I also add sesame seeds and green onions if I am feeling fancy. Hot sauce would be a good addition too.
Proud of your efforts good stuff here
🎉🎊🎉🎊🎉👏👏👏👏👏 Is it August 1st yet?!?

Fantastic job! You should be so proud lots of folks are struggling and you showed them some good options for meals.
I would love to see you do $150 or $200 to see a more balanced month like veggies and fruit even from the farmers market!
And coffee.
Yes! I'd like to see this too! Then she wouldn't be as limited with condiments and extras and can always put extra servings away in the squirrel fund 😊
I would love to see dinners for 2 on an extreme budget.❤
I would to see $100 a month in 🇦🇺 I don’t think you would be eating as well or as much and just eat tasteless starches
Wow everything about this series was absolutely brilliantly done. Fantastic job!!
Whenever we find pork loin on clearance we grab it and we grind it up in the food processor so we can use it as ground pork for egg rolls, fried rice, ground pork tacos etc. it’s a lot cheaper than buying ground pork itself.
This series challenge and recap were awesome! There are many great ideas and tips to stretch the budget. I can't wait for the next series! Rebecca, we are here with you for it and supporting you. Thank you for building a great community! ❤❤❤
Can't wait for the next series. This has been so much fun and I have found a couple new recipes, that I will keep making. Most of us complain about the high prices of groceries but don't make a budget and stick to it, you have done the work and all we need to do is follow it. Thank you great series

You did it!! Pom poms waving. I had no doubt at all that you'd do it. My favorite flavors that I get stuck on are 'anything with BBQ sauce' and 'anything fried'. I have to really work on getting variety in my menus and your series are so helpful. And I'm a senior on a limited budget and don't qualify most months for food stamps. I am so grateful to you for al your hard work and for the people who comment here.
