It’s supposed to be eaten raw, not cured in lemon. Otherwise, it is ceviche. Aguachile is just fresh shrimp with lemon juice. As soon as they serve it, you eat it. Raw shrimp has a different texture than cured shrimp.
When I visited beautiful Mazatlan before Covid, I really enjoyed the vibe of the people there...very kind and welcoming! The location is beautiful as well. Beautiful everyday people and environment

It also has to do where the fish is from, most waters in mazatlan áre kept clean for the same reason that it provides a vast majority of food for their community.

It’s supposed to be eaten raw, not cured in lemon. Otherwise, it is ceviche. Aguachile is just fresh shrimp with lemon juice. As soon as they serve it, you eat it. Raw shrimp has a different texture than cured shrimp.
