Seriously, these little bites of deliciousness are crispy on the outside, cheesy on the inside, and have just the right amount of kick - not too spicy for the kiddos, but definitely flavorful enough for the adults. I absolutely love how simple they are to throw together on a busy weeknight (because who has time for complicated recipes?!), but they're also totally fancy enough to serve as an appetizer at a party or get-together.

*Ingredients:*
*Chicken Fritters:*
2 boneless, skinless chicken breasts, cut into 1-inch cubes
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried onion powder
3 large eggs, beaten
1/4 cup mayonnaise
1 tablespoon diced canned green chilies
7 ounces pepper jack cheese, shredded (about 2 cups)
1/4 cup chopped fresh cilantro
7 ounces all-purpose flour (about 1 1/2 cups)
Vegetable oil, for frying
*Cilantro-Lime Crema:*
1/2 cup sour cream
1/4 cup mayonnaise
1/2 jalapeño pepper, seeded and finely diced
Juice of 2 limes
1/4 cup chopped fresh cilantro
1/2 teaspoon garlic powder
Pinch of salt
*Instructions:*
1. *Prep the chicken:* In a large bowl, combine the cubed chicken, salt, pepper, and onion powder. Toss to coat evenly.
2. *Make the fritter batter:* In a separate bowl, whisk together the beaten eggs, mayonnaise, green chilies, pepper jack cheese, and cilantro.
3. *Combine:* Add the chicken to the egg mixture and stir until well coated. Gradually add the flour, mixing until just combined (a few lumps are okay).
4. *Fry the fritters:* Heat about 1 inch of vegetable oil in a large skillet over medium-high heat (350°F). Drop heaping tablespoons of the chicken mixture into the hot oil, working in batches to avoid overcrowding. Cook for 5-6 minutes per side, or until golden brown and cooked through. Transfer the fritters to a paper towel-lined plate to drain excess oil.
5. *Make the crema:* While the fritters are cooking, whisk together all the ingredients for the cilantro-lime crema in a small bowl. Season with salt to taste.
6. *Serve:* Serve the warm chicken fritters topped with a generous dollop of cilantro-lime crema and a side of crispy fries.
*Tips:*
For spicier fritters, add an extra 1/2 tablespoon of diced jalapeño or a pinch of cayenne pepper to the batter.
You can use other types of cheese in the fritters, such as cheddar, Monterey Jack, or a Mexican blend.
Leftover sauce is delicious as a dip for vegetables or chips
