    Thanks for making this. Fellow Homebrewer here looking for a port wine project. This is the only homebrew port wine video I found. Appreciate the insights!

    After adding the brandy do you need to add anything like potassium sorbate? Is the brandy alone enough to stop fermentation so we don't have exploding bottles? Also, in terms of taste, did you/could you backsweeten?

      Add potassium sorbate and cold crash at the same time. You could back sweeten but because we stopped the fermentation early, there is going to be plenty of sugar left over.

    Hello!
    Thanks for the interesting video!
    The following points were appreciated:
    1. Baker's yeast could be used. There are many who use this with good results. Now technically, for wines a "bottom" or brewers yeast is used as the fermentation starts from the bottom of the container, retaining most of the flavor. Baker's yeast is a "top" yeast and so some flavours are lost.
    2. Stopping the fermentation. Of course one wouldn't want a wine fountain in the house due to pressure build up with ongoing fermentation.
    Adding alcohol is one way and some use heat to stop fermentation, thereby reducing the alcohol which is not so bad!
    What most people don't like about homemade wines is the high acidity and discomfort due to acid reflux it generates.
    Many commercial wines are also highly acidic and drinking a few glasses of wine could bring on a headache. Some say that this is due to the Salt Peter used and|/ Sodium metabisulphite.
    There are many who swear by homemade " port wine " made from raisins and many tasters endorse this method!
    This guy seems to have a likeable personality so cheers.
    One request - the video could be shortened for the less technically inclined. Also giving weights and measures for a successful batch could help.

    Hey could you let me know if the homemade juice alcohol is safe to drink, without saying not to drink because I obviously know that. But I heard someone say that it could be poisonous, is that true? If u mix juice, yeast, and ferment for 5 days, is that okay. Also any other to watch out for?

    The simplistic method is a great idea. Would you rack the wine before adding the brandy? Also what type of spiral oak did you use? Light char, medium char etc...?

      Yes, you should rack before adding brandy. I used medium char.

    Here's a tip home distillers do to oak age their burbans. After adding the wood chips put container in freezer overnight. Next morning remove, place on counter, that night repeat. Each day this is accomplished mimics 1 year of aging. The freezing/thawing of it contracts/expands the wood's pores drawing in and expelling the tannin.

      Not to brag, but this came out great. I could literally bring it to the bar I work at and no one would probably notice the difference.

    Fortified wines are an acquired taste. Theyre not that popular these days. I actually like port. Thanks for showing.

      i will admit i have not tried very many different wines, always thought wine just tasted bad and wasnt for me and was going to stick with beer. one day a friend of mine grabbed us both a bottle of Post white port and its been my favorite drink ever since. its the strongest wine i have tried at 19% but by far the best tasting.
