      He reviews the unit against the existing model, and also stock/hypernova ultra burr set/opus. Often they compare other grinders against each other. If it was simply a sale pitch it would list the specs and that'd be it. For people who can't test or try these units first hand these videos are helpful for people to make their decisions on what they might want to purchase. It's obvious Josh nerds out pretty hard and tries to be thorough. As for objectiveness, he mentions a few cons at the end. Did you actually watch the video?

      @@matthewbrown4549 I did watch as I typically do as I do like supporting AB, but I’d stick with lance, hoffman and quan etc as they’re much more brutally honest and have less of a sales pitch. They’re much more in-depth and the actual level of detail one would want. Remember these AB vids are still more for accessibility to non coffee people hence it’s not super detailed

      ​@ibate9833 thanks for clarifying. I definitely don't disagree with you that independent guys you mentioned go deep and unbias usually (other than personal bias). I always watch their content too. The first time I watched an AB video I realised they were a retailer. But I learnt alot from their videos when I was starting out. Also helped me make buying decisions... These videos are available world wide.. I think they help people regardless of whether they are going to buy from AB or not.. I get your argument but I don't see a reseller like AB being someone like Lance and Hoffman as it's obviously not their business model. That's why we have lance and Hoffman, and what they do is their business entire model (ad based revenue.) AB isn't going for ad based revenue but rather show casing their products they sell... And if you compared AB to other resellers. You know they've tested all the products and have an extensive knowledge base. I'm not sure other resellers could offer the same. Another reason I enjoy AB videos. And I'm happy to buy from them.. if anyone watches one review of a product from one source, and buys that product because of that review, that's alittle impulsive in my eyes haha

    Good to hear they've upgraded the gear box. I've heard nightmare stories of people plowing through multiple units within a year. In all cases the failures were due to stripped plastic gears.

      Yeah I think a lot of asian companies test on too dark roasts. Nordic style stuff really taxes grinders more than I think their engineers expect

    I think its great they fixed the issues with stalling and motors failing. Its interesting to hear it coming from this grinders community but not with the lagom mini. I had a lagom mini motor fail. When that grinder came out there was so much hype around it but it all seemed to die out quickly. There werent many people talking about motors failing yet people are very critical with the Varia.
    The motor failing was something I was skeptical about with the VS3 especially coming from a lagom mini. At the price point I still think i'd choose the DF64. I will still closely follow the VS3 and other similar sized grinder in the future. I do lust after small form factor but hope for longevity.

    I bought the varia from AB about 2 months ago with the standard burr. It’s been a fantastic grinder!
    Only downside is the high pitch noise during grinding is not the most pleasant. Otherwise it’s a lovely grinder

    I've had the gen 2 grinder for a few months now. Love it except for the horrible grind setting drift. Varia agreed to send larger springs which they said would fix the problem. Also, for others considering this grinder…get the black. We love our white (more cream color), but damn does it always look dirty!

    I have seen this review and decided to buy a v2 varia vs3. Incredibile taste even with standard burrs. My problem is that it already got jammed twice with medium light roasted coffee. It is true that at 3.5 burr possition it almost blocked my machine and I needed a long 55 sec extrection with a 25 sec extraction at 2 bar profiling and 30 at 8 barr for a ratio of almost 1:2 (19: 35). Even so, the taste of the coffee was excelent with a lot of acidity and sweetness.

      That's awesome to hear 🫶 That's a wild espresso recipe - love that it tastes so good. I wonder how you could keep this same taste profile, but perhaps grind a little coarser so as to not jam the grinder up with too fine a grinds?

      @@AlternativeBrewing What amazed me is that even it was highly over extracted cup I could not find any bitterness. This morning I moved to 4.3 dial. The extraction was perfect with preinfusion at 2 barrs than profiling to 9 ending with a 4 bar. No jamming for 19 grams of Ethiopian washed (8% development roast). I usualy roast my coffee between 3% development for natural processed to 10% for washed. Varia is quite amazing. I have a DF64 with 64 MM SSP HU perfectly aligned and a Honne grinder (perfect copy of Versalab made in Romania). DF 64 with SSP offers more acidity but Varia has a unique complexity. HONNE grinder is better with medium darker roast, closer in taste to Varia but still very different for light roast. I will make a blind comparation soon. I really look forward to buy the Hypernova Ultra burrs. Are they better for light beans? Will it help to avoid jamming with a lighter roast (3% development )?

    Hi I had v3 gen 1 which they replaced with a gen 2 as it broke , I think v3 is so good I love the way the slightest grind setting changes my espresso extraction and really allows me to fine tune my espresso flavours
    This grinder is streets ahead of the eureka minion I had before
    There sending me the ultra burrs which I’m looking forward to trying out 😊

    Thank you for your authentic and always in-depth reviews! This definetly helped me with finally picking an espresso grinder. I was going to buy either one of the Sculptor models for when they are coming. But hearing the amounts of coffee you need for them seasoning, mainly for the 078s as I've read, I simply couldn't be bothered. Hope I'll be happy with the Varia vs3 gen 2 even if it's the cheaper choice compared to the 078s and maybe I'll be upgrading burrs later on it.

    I got my VS3 at Varia Brewing along with hypernova ultra and extra dosing cup damn all perfect quality made. Dosing cup nicely fits on my portafilter.

    Hi Joshua, congratulations on your content, I follow you often and find your in-depth analysis really effective and understandable. I've been watching your latest videos on the Varia VS3 and I must say I was really impressed with this small but capable grinder.
    I am undecided whether to get this or a Eureka Speciality. Let's say for reasons of geography and pride (I’m Italian) I would be more inclined towards the Eureka, but if I look at the single dosing issue and aesthetics, I probably prefer the Varia. What would you recommend?

      🙌 love it ! thanks so much! Eureka have a bunch of accessories, if available to you - they are also an extra cost - will turn any Eureka in to a Single Dosing Grinder. THat is with a smaller hopper and bellows. If that's the case - this is a great option - it will work out more expensive but worth the trouble. The Varia, is hard to go by though if Im being honest. It performs great, is compact, quiet and makes superb coffee! I'd say get the Varia VS3 based on all that.

    Interesting that you found 3-5 to be the best setting for espresso.
    Personally I’ve only found 1.8-2.2 to achieve ~1:2 ratio in ~30 seconds for my medium roasts. I wonder if there’s an issue with my grinder? Or perhaps it’s dependent on the espresso machine.

      Yes, very dependant. With the Flair 58, I use 2 . . with the Rancilio Silvia I use 3-4.

    Hi Josh, fantastic review as always - Quick question, do you modify the grind settings in the grinder with the grinder turned on or off? There is no clear indication in the VS3 Gen 2 manual and all the videos show different methods. Thanks!

      Thanks so much! You can change the grind without beans in it off - but with beans in the hopper, you’ll need to turn the grinder on 👍

      @@AlternativeBrewingditto. The DF64 is $600CAD, here in Canada vs $400CAD for the Varia (+ another $115CAD for the Hypernova Ultra burrs), so is the ‘64 worth the extra $85-200CAD…
      These are the two I’m looking pretty hard at to upgrade from my Breville 450XL and J-MAX. While I don’t do espresso (yet), I do grind very fine for Turkish, Moka and Aeropress. The Breville is fine for the latter two, but just can’t grind espresso or Turkish. And it’s loud and has to have the snot beaten out of it after grinding (also loud) to keep retention low. I love my J-MAX. It’s my daily driver and travels so well, but it would be nice to have an electric grinder of similar quality, that isn’t obnoxiously loud to everyone else in the house.

      You're welcome 😀 Yes - the Hypernova Ultra I would say are 10% better then the Hyper. I don't think you're getting a whole new experience - but a heightened one - yes. Much much better for Filter coffee - and equally for filter. Gridns faster and is very clean and sweet. Not great for more italian or more heavier chocolate forward coffee profiles.

      @@Sunshine-Dragon Compak or Macap are a good Grinder at the same price bracket - that don't particularly go for offering clean, super bright flavour profiles - yet the Varia VS3 is still well capable of providing chocolatey, full bodied notes when dialled in well. Especially with the default burrs.

    Have you noticed anything in particular regarding the temperature of the ground material? I heard that over 40 degrees celsius has an noticable impact on taste

      Yea you’re correct- the hotter the grounds - the faster they’ll extract. With the Varia VS3 though not at all - the grinder being a single doser, doesn’t get the chances to heat up that much.

    Some months ago I dived into the hand grinding rabbit hole, but this grinder it's my 110% suggestion/choices for an economic reliable espresso grinder, especially with the ultra new burrs
    Maybe they increased the rotation speed to eliminate some stuck issues, but personally I prefer low speed rotation

    Received my Cafelat Robot today and the Varia 2Gen with the Hypernova Ultra burrs 2 days ago. Oh wow… A completely new taste world has opened! Soooo much better than my Sage Barista Pro was! I‘m blown away, I may not be super experienced in more expensive coffee/espresso gear yet, but this works so well! Thx for the review! Oh, and mine is quieter than yours, not unpleasant at all.

      I'm running a barista pro with a custom shower screen and filter basket enhancements, IMS shower screen and Normcore 18g basket. How much better did you find the espresso taste and what grind setting have you settled on? Much appreciate the insights 🙏🏼

      @@TiagoRodrigues-je5sv I have to grind a lot finer for my new Cafelat Robot to reach normal extraction pressure. If I put a grind that fine into the Sage, it couldn’t extract a thing: It’s obviously not coming close to 8 or even 9 bar pressure. The finer grind alone seems to be responsible for a lot of the difference I taste. For the Sage I had to do a grind on 0, for the Robot I‘m at 9, so a full 10 steps finer.

    Hi Josh, love the content. What’s causing the drift in grind setting? I’m hearing due to tolerances in the CNC-ing.
    Resolutions include adding food grease, teflon tape and replacing springs? Sounds like diff issues. Could you please explain?

      Thanks so much 🙏 The Gen-2 has had very few issues reported that were being reported on the Gen1 in my experience. Mostly occurring through change of burrs upgrade - and yes; using a silicone lubricant, the replacement of the bearing along with correct installation of burrs, fix what we have seen.

    Heyy love the content man! I want to buy the breville/sage bambino plus for my first machine. Got some good offers one eBay. I’m deciding on the Varia vs3 gen2 for 289€ or the baratza encore esp for 180€. Is it worth paying 100 more or is the encore esp enough?

      Personally- Varia VS3 is worth it 👍 another step up on the cleanliness, retention, workflow, noise, and quality of materials. And above all else, it’s tasty performance

    how would you say the ultra hypernova burrs compare to the iridescent hypernova burrs that you tested (and liked) in the "VS3 Burr Options" video? do the ultra serve you better when considering both espresso and filter brewing? it's only a $30 USD difference so that's a non-factor.

    Very interesting machine, but according to my experience low speed rpm can more stuck with hard bean or light roast bean, so it's will be more often to open the burr and clean it. ... How about your Varia VS3??

      Using the bellows you remove most of any grit and grind in the chamber. Yea it’s low RPM however it is also high torque, so no problems with light roasts

    Hi great video thank you I have bought one based on your review, one question how tight should the hopper be when it’s on zero ? If I tighten it fully it goes 2 minus spaces past the 0 does this mean there’s a problem with my grinder ? Ps for reference I also have the hypernova ultra burrs.

      I would maintain that 0 is zero. Remembering - it's really just a replicable reference point on a scale. Unless you're counting micron size 😂 - So keep turning it only to Zero as your 0-point and not past, and all other Grind sizes will be reliable.

    The Varia looks like it is all metal including what comes into contact with the coffee beans yes? The Opus looks like it has plastic in contact with the beans throughout multiple stages is that also correct?

    Thanks for the review, just small questions: Can we go ultra fine with that grinder, something fitting for a Turkish coffee pot? You mentioned that the powder get fine, but is it enough? And the same for the other range - is it really coarse enough for cold brews and beyond?

      Yes, absolutely coarse enough. Though truly fine enough for turkish coffee is something that should only be attempted with a grinder designed for turkish grinding. I'm aware the powder of a true turkish grind will eventually break any regular Coffee Grinder - esp. those found under $1500 or so.

      Do you have recommendations for higher-end single-dose grinders? Not sure yet if I want to extend my budget beyond niche zero/vs3 prices, but honestly thinking about that, instead of being unhappy ot buying now and needing to buy another one later (and resell etc).

    How does the Varia Gen 2 compare to the Lagom mini? Which is the best option for all purpose grinder?

      I haven't tested gen2 vs Lagom Mini - though in the Gen1 vs Lagom Mini - I preferred the Varia on flavour. With the new Hypernova Ulta Burrs on the Gen2 - these have honestly blown me away in what they did in the filter cupping as well as espresso. - so I'm going with Varia again.

    How loud is this thing? Is it quite enough to have a conversation while grinding (My Sunbean Cafe series grinder is not!)? Also, how does dosing with the container compare to grinders that grind into the group handle?

      It's easy to have a conversation over it yes 🙌 I know the Sunbeam Cafe series well - the Varia is far far quieter than then! and how does dosing with the container compare to grinders that grind into the group handle - I'd say pretty well. Still very clean and efficient - the dosing cup always releases all the grounds easily so no issues there. You will want a dosing ring for transferring

      It's a relatively quiet grinder due to the lower RPM combined with a solid body.

      I ended up buying it. It's much quieter than the Sunbeam, and easily quite enough to have a conversation - so I am stoked! It's not super quiet though, asni can hear when someone is making coffee from the other side of the office, but it's definitely acceptable
      Also, turns out I actually prefer dosing into the container and then pouring it into the basket (with a dosing ring). Yes it might take about 20s to grind for a shot, but that gives me time to get everything else such as milk ready.

    Hello there, I have changed the original burrs for the Hypernova burrs and what used to be a good grind size for a dark roast beans at 4,5 is now way too fine. I need to go all the way to 6,5-7 now to get the same extraction time of 28scds. Have I done something wrong while changing the burrs? I have the gen 2 and it was very straight forward so I don't know where I could have made a mistake.. Any advice? Thanks :)

      Problem fixed by removing the thin washer. Help provided by Bravia customer service.

    Just wish they’d design it with a better motor or figure out some sort of sound dampening. That whining noise is awful :/

      Unfortunately, that's not very possible without upsizing the grinder due to physical limitations - They're using gears to get more torque (trading speed for torque) which means the motor needs to run faster (higher pitch/ more annoying).
      Even if they had implemented ball bearings for all the gears, a large part of the high pitch noise is going to be contributed by the motor. You could dampen this by adding more weight - which necessitates making the grinder larger in most cases. I do suppose if they were to strap a brick of metal to the bottom, then it might just work without increasing the footprint.

      Good point, there’s definitely a lot of people and cases who would want (and miss) this compact form factor. I’d just personally love to see a varia with a bit more heft (maybe niche sized) to accommodate a quieter system and perhaps different burrs :)

      And the Niche is in a whole other price category for most of us. In Canada, I don’t think I can get one for less than $1200CAD, where as the Varia is only $400CAD with the stock burrs.

      Ode doesn't do Espresso well - even manual espresso. -- So for this I would say get a Varia VS3

    Just wondering how this grinder goes with 'grind size carry over' ie when you change from espresso to French press settings? I know my Breville Smart Grinder Pro needs some beans run through on the new size setting after changing.

      Yes, absolutely - DF64 or Varia VS3 are great choices! Certainly over the Opus. Opus is good, though it’s a budget grinder. You’d not be disappointed with either Df64 or Varia. Price differences in Australia make these two not that comparable - but performance similar. DF64 has advantages with being 64mm burr upgrades and ofc bigger faster motor 🫶

      and Basic DF64),but DF64 is exactly my maximum for the grinder. So I'm really thinking just to gram Opus and don't care about the price and performance difference. Maybe you could recommend some machine that would be the best for espresso only?

      Everyone has a budget when puchasing a new grinder - whether it's $200 or $2000 - I would consider the Opus a great Budget Grinder, then look at the Varia VS3 gen2, then the DF64 or DF64V, than, IMHO the Fiorenzato Allground, Niche Duo and the Lagom P64 as a decent choices in ascending order 👌 @@ofreed3973

    I've had the VS3 Gen 1 for about 9 months now and i totally love it. Luckily I haven't had the two main issues (yet).
    Does anybody know if the Hypernova Ultra Burrs from the Gen 2 are retrocompatible with the Gen 1 model?
    It seems to me that they should since the only changed the motor, but just want to make sure, since this review now made me want to consider an upgrade

      Yes, they are compatible. When you receive them - you'll be replacing the whole top burr assembly with it, and o-ring! all included int he box 🔥

      Stick with the Supernova burr IMHO (default S/s, black or gold) - you'll still get very nice clarity, sweetness and body out of these burrs - whereas the Hypernova are more designed for fruittier lighter coffees.

    Theres a much bigger issue you did not highlight especially on espresso grinding, a second or subsequent grind is always much coarser extraction time can be 10s faster than your first batch

      This is not my experience sorry! This does sound more like you Grind Adjustment is moving. These occurrences are happening with burr changes - however a spring replacement I believe is resolving this issue 🫶

    38mm conical … surely a Eureka Mignon Zero with 55mm flat burrs is gonna be a much better option

    Unfortunately still drifts so no much for precision. I've been sent a new set of springs that apparently will fix the issue on my unit, still to try (they arrived today).
    EDIT: new springs tested. Still drifts. Instead of 10 microns, 5 microns.

      @@AlternativeBrewing I have the Eureka, and its 54mm, but older style and I dislike the adjustment knob and the cleaning, as the top comes off the screws are not designed with a sure stop, so its always a guess and 5 or more shots wasted as I dail back in. So, for espresso (which is about 100%), with good burrs out the box (not yet into updating the burrs with $$$)I am considering the Timemore 64s, Gevi, DF64gen2, but Now maybe the Timemore being more so the one to get due to price. The Gevi is more, and the DF64gen2 has some stalling issues? or making a mess, and I am trying to avoid the bellows, though on the DF 64 layout it is passable. Not on the horizontal. I do like flat burrs, so I can have the OPTION to upgrade after years of getting board :-) I am looking around /under $500, so the Zerno is out , and I dislike the mount look.

    Still not super encouraged by the 150 kg life rating. Just shows it’s not really made to last to me. Even on relatively low use that would be like 5 years max.
