My favourite dish 😋👍😀
I am malaysian chinese and i cook my own patin tempoyak. To get rid of the muddy taste, use salt and lime on the flesh first, wait for 30 minutes, wash away, then 2nd round use salt and kunyit, wait for 30 minutes, then wash away. now u can cook the patin fish with tempoyak. tip for u if u wanna try cooking yourself.

Also..after all clean, exfoliate the fish with tepung/ white flour. The flour will remove the fishy smells then rinse it again with water.

Most of Malaysian river are brown in colour because of mud, its not polluted. If you want see a clear river should visit one in the forest.

Just a reminder for Traveller. In Malaysia, not all food shop can prepare good/delicious patin tempoyak. Be careful. If you want to try patin tempoyak, you should ask local first, or go to Temerloh Pahang. This food shop, Gobang Maju Patin Tempoyak is one of the best/famous patin tempoyak in Malaysia 👍👍👍

Yes! Big & super deep river in Malaysia always muddy & murky because soil in hills & riverbanks contain high of ‘laterite’ soil.

By the way, if I'm not mistaken, patin lives in muddy waters, that's why the water is yellowish. But it's not polluted 😁

The fish have no choice because most rivers in Malaysia are becoming more and more muddy because of human activity. Maybe patin can tolerate it while some fish species can't tolerate muddy waters.

the river look muddy but very clear water, people use for drink(refined in water plant) the best patin buah(other species) very rare and expensive only can fine as wild in Pahang river especially in Taman Negara Pahang

The river is muddy-coloured (brown) due to confluence of nutrient flow from the mountainous region (Titiwangsa mountain range) and accumulate sediment especially on slow, flat part of the river. It can be odd since most Japanese river is kinda clear due to spring water or snow melting origin on top of the mountain. And since Japan is quite a mountainous country, the river flows faster from top to bottom. Just like Yellow river in China, it has the same colour but it creates nice, fertile delta downstream 👍 for plantation.
Also why Kuala Lumpur gets its name, the meeting between Sungai Gombak and Sungai Klang in a valley. Slow moving river. If you go upstream, the river is not muddy.
Kalau lepas hujan lagi kuning, mungkin ada pembalakan di atas bukit.

My family from Pahang and different district has their own different ways of cooking gulai masam tempoyak. There’s Temerloh, Jerantut, Raub and Lipis. These places are the original patin tempyak style of cooking coming from pahang.
I just came back from Hari Raya open house, watching kaz eating Patin Tempoyak just make me feel hungry again 😂

Yup, I’m going here and I’m bringing my family too.
Actually the locals pronounce Temerloh (other variation Temerluh) slightly towards テゥムロー. But I find it funny when Kaz pronounce it テメロー since てめ means "you" but in a very informal/rude way to say. Then "Lu" (or "Lo" in Indonesians) also means "you" informal for local Chinese slang that also can be very rude.
