Havent watched yet but My go to santa build is a genie warlock (undine) multiclassing into bard (creation). I played them for a Christmas one-shot last year Get a magic bag and the ability to pull out presents for your party, plus your attacks have some Christmas cheer (cold damage)
Imagining Santa as a Barbarian is both hilarious and terrifying. I mean, in concept, thinking of him as some kind of Arcane or Divine Mage makes sense (especially if he's some kind of Wizard or Cleric), as he's usually portrayed as having paranormal attributes and esoteric powers through various means when his feats aren't being totally explained away as advanced or supernaturally powered technology, but a Barbarian...I just picture his speeding from house to house like a madman on cocaine in a Barbarian Rage with "Ace Of Spades" by Motorhead blasting. Besides that, one interesting idea for Santa that is related to tabletop games is Dimension 20's The Unsleeping City and it's interpretation of Santa as a high level Wizard who clones himself to reach various houses across the planet, but some of them malfunction and are sent to New York under the guise of cosplayers and are rounded up by various esoteric hunters to prevent them from harming locals.
I built a couple of L20 christmas themed characters last year. A tiefling warlock based on Krampus, a witch based on the italian christmas witch, and a gnome something based on the swedish christmas elves. I'm not sure what I did with santa, and I woefully ignored the X-Man himself, the worlds favourite cleric who cast revivify on himself. That being said, ew new rules and ew ai generated image on thumbnail
