    Great Vid Fik. I have been doing Dino ribs no wrap now or sometimes I wrap right at the very end. Love the heavy bark on them, and they can take it. I do wrap in butcher paper and tallow them a little when I pull them off for the rest.
    Also been taking briskets longer now too before I wrap, usually only wrap brisket for an hour or two at the end. Temps probably somewhere in the mid to upper 180’s.
    Nice job FIK, looks great and I enjoy the content.

      Thank you! Yeah, ever since this video I've been cooking the Dinos unwrapped, only wrapping to rest. I do the same as you for brisket. Appreciate you stopping by!

    I like beef ribs more. More room user errors,.of which I make plenty. And takes a little less time

    Love seeing your process. What internal temp does the bark typically set for you?

      Thank you! Honestly I do not temp them. I just go by color and the feel when I push into them. But if I had to guess, probably around 170-180F

    How open do you have your smoke stack?

      Quarter open for 240F or less. Half open for around 265-275F, and fully open for 300F plus.
