Enchilada Casserole

  • Enchilada Casserole
    (For a 10” Camp Oven)
    Ingredients:
    2 cans mild red or green enchilada sauce (10 oz. each - 2½ cups total)
    1 package 6” white corn or flour tortillas (12 count)
    1 can refried beans (16 oz. - 2 cups)
    3 cups of cooked, crumbled ground beef or cooked, shredded chicken (divided)
    ½ medium yellow onion, finely diced (divided)
    2 cups grated mexican style 4 cheese blend (divided)
    1 can mild diced green chiles (4 oz.)
    Optional Toppings:
    salsa, thick & chunky
    fresh cilantro, chopped
    Directions:
    1. Grease inside of Camp Oven. Line with parchment paper if desired. Start 23 briquettes.
    2. Spread ½ cup enchilada sauce on bottom of oven. Place 3 tortillas overlapping one another for maximum coverage on top of sauce. Spread ½ cup of beans on top of tortilla layer. Spread 1 cup cooked meat on top of beans. Add ¼ cup diced onion on top of meat. Sprinkle ½ cup of grated cheese on top of diced onion. Add 2 tablespoons of diced chiles on top of cheese. (Layer #1 is now complete)
    3. Build layers #2 & #3 starting off with ½ cup of enchilada sauce on top of chiles.
    4. Build layer #4 without any meat. Cover oven with lid.
    5. Place 7 briquettes under the oven wall, spaced evenly. Place 16 briquettes on the lid. (14 in a tight outer ring and 2 near to the lid handle) Bake for 30 minutes or until bubbly. Remove from heat and serve. Top servings with diced onions and any optional toppings. ENJOY!!!

      Hey Grumpy, A few years back we had some devastating fires and I wanted to volunteer, hoped to cook for the firefighters on the front lines. I talked things over with my supervisor and he granted me a leave of absence. I contacted the state agency and was told that meals for the firefighters was all contracted out and the best way I could help was to donate money... This was the second time we've cooked for or cooked with firefighters. Very satisfying for sure...

    Looking good in the great outdoors too!! Thanks for sharing with us Dean and Joanie. That was a super pot of a great ENCHILADA CASSEROLE you fixed up for the Firemen up there Joanie. Looked really good and the bees were helping you move a little faster fanning all the ingrediences just enough to keep down the heat some. Great job and a fine video. Fred.

      If we had known beforehand, Joanie would have made a larger pot, for the firefighters.

      Harold, Our local group hasn't met up since covid first hit with all the lockdowns. Several members are elders and some in our group have health issues now...
