i use thin sliced center cut bacon (less fat and cooks perfectly w/o compromising the scallop ) duck sauce and dry mustard ....in broiler bacon side up on both sides then broil both sides of scallops ... but the sweet and zesty combo works !
1/4 American cup of horseradish 1/2 American cup of apricot jam or marmalade 1/4 American teaspoon of cracked black pepper He also says that you can change those proportion however you want! Hope this helps

Have any of you idiots ever pan seared scallops ? Par cooking is the smart way to go with quite a few dishes where the proteins cook at different rates. Stick with Burger King.....more your speed.
+Markchill2 Hello. The bacon takes longer to cook than the scallop. Putting raw bacon around the scallop would cause longer cooking overall and the scallop would be ruined.
It's called par cooking. The bacon gets a cooked a little prior to wrapping it around the scallop. Raw bacon around the scallop will take longer to cook and then your scallop will be over cooked.

Soak your wooden skewers in water first, for an hour. Otherwise the scallops will stick to them and it's a mess getting them off the skewer.

Superseanbarry I use pure scallops straight from the boat onto my stove. I love living on the coast
They should be dry. 'Wet' scallops are treated and wont sear properly.

That's my thoughts. Scallops are max 2 minutes. That was almost 10 minutes.
