    Great interview! Thanks Chuck and Amy! Amy had a great key point: "when you look at the science and the evidence, why not do the most that you can for your own benefit, for your own health, for the health of the planet, and to not potentially cause more harm and suffering to animals. Be an example for people". Thank you again Amy!

    Well done Amy. You glow in healthiness. (As do you, Chuck!). Your story about the breast milk given to your daughter is remarkable. What an insight! Thanks for sharing your dramatic change in health due to going over to plant-based nutrition. Inspirational.

    Chuck, I’m a long time subscriber and have made many of your recipes but this is the first time I’m commenting. I just wanted to let you know that these new Everyday Vegan Stories are wonderful! I’ve been WFPB for 4-5 years but sometimes have difficulty keeping on track and stories like these really help. Thank you for doing this and thanks to Amy and all of your guests for sharing.     A very dear little duck convinced me to become vegan. I know it sounds strange, but it's true. I did it cold turkey and have never looked back I have Multiple Sclerosis, and it hasn't really helped that, but it has helped with one other major health issue. In 2019 I got a very severe kidney infection which went undetected for quite some time. Because I'm a paraplegic I am unable to feel the signs and symptoms which let other people know that they have a urinary tract infection. As a result, I ended up with stage IV kidney damage. That usually requires a person to be on dialysis, but due to my vegan diet, I've been able to bring my creatinine levels down to normal levels.
    Dear little Quigly Quack was my precious, and I honour her by not eating other animals. She was a very unusual bird, she was sentient, and brilliant, and having known her, I can't imagine eating another sentient being.
    I'm kind of surprised, but I don't miss meat. I've replaced my meaty meals with meals that are very flavourful. I use lots of herbs and spices in my cooking, and it makes me look forward to every meal.
    I also avoid heavily processed foods like the plague, and my doctor thinks that probably has a lot to do with my being able to bring my kidney functions down to normal levels even with my kidneys as badly damaged as they are. He says he has never seen someone in stage four bring their numbers down to normal before.
    I used to think it would be too hard to make many of the recipes I like, but I have found that I rather like my time cutting vegetables. It's my quiet, contemplative time. It's a time when I can clear my mind of all other things, and be at peace with the world. It's a time when I can engage in introspection, and think of the ways that I can be a better person to those in my life. After it all goes into the pot, I get to enjoy the smells and aromas which fill the house, and I don't have to worry about grease spatters all over everywhere.
    Have any of the rest of you noticed how much easier it is to clean the dishes of a vegan meal than it is to clean them of animal products? Everything just rinses clean. You save on dish soap because you don't have to put a ton of it on to cut the animal fat. Just a little drop cleans everything just super easy. Or at least that's been my experience with the things I cook. Have any of you noticed the same thing?
    I am also on a very limited budget since I'm retired and disabled, but I've found that even with the herbs and spices I use my grocery bills are lower than they were when meat was in my groceries. I couldn't be happier about that. Now with egg prices skyrocketing, it's even better! It's that much more money I have for other things I need. Just think of the money we vegans have in our wallets as result of our choices!

    Ho wonderful that Amy shared her of how plant based eating has totally changed her life! I'm sure countless people struggling with even one of the health issues she shared will be encouraged by her story! Hippocrates supposedly said years ago, "Let food be your medicine" and that is still true today!!! Thanks Amy and Chuck for sharing this great testimonial!!

    Thank you Amy. I am a vegan I used to meal plan two drum sticks brown rice and vegetables. when I would get a drum stick with a broken bone it hurt my soul to think what like the chicken had and what was it like so I stopped eating meat and went straight to vegan. I love fruit and a good salad plain. I had thyroid cancer as well and my sister was telling me how she felt and I asked more questions she had cancer as well. You keep going strong.
