Entry level to paddling or entry level to surfskis? I'd say it is a great beginner's ski but definitely not the right boat for somebody brand new to the sport.

RivannaHipSnap entry level in surf ski. Do you try epic v8?
It would be an excellent first ski. No. I've never paddled a V8.
Only question I have is if it is stable?
Stability is relative. There is no way of answering that without knowing what boats feel comfortable to you and which feel unstable to you.
