Es Camcao adalah minuman tradisional yang segar dan murah meriah. ada di pasar Kotagede Yogyakarta. Es Camcao merupakan serapan istilah masyarakat Jogja dari kata es Cincau. Tradisi pembuatan minuman ini dibawa oleh para perantau dari Tongkok yang beradaptasi dengan budaya lokal. Camcao adalah minuman dingin yang di antara isinya ada semacam agar-agar dibuat dari daun Cylea barbata Myers atau cincau hijau. Tumbuhan cincau hijau merambat, daunnya berwarna hijau pucat dengan rambut di atas permukaannya
Proses pembuatan agar-agar (camcao / cincau ) diawali dengan perendaman, yang biasanya dilakukan setelah daun diremas-remas atau dihancurkan. Ada juga yang menyertakan perebusan terlebih dahulu. Pemberian soda kue dapat dilakukan sebagai pengawet.
agar-agar serupa gel berwarna hijau akan dihasilkan dari perendaman daun dalam air tersebut. Gel terbentuk karena daun tumbuhan yang mengandung karbohidrat dan mampu mengikat molekul-molekul air. Es camcao disajikan bersama santan, es dan gula aren. Lezat.
