It is. NY style pizza doesn't have a lot of sauce. It's typically 1 ladle full spread across the entire pizza.

If you hold your hand palm-up while closed and holding cheese, then roll your fingers a little bit and let the cheese fall out next to your pinkie, it’s way easier to go around the edge of the pizza in a big circle very quickly and accurately (to ensure that cheese seal so the sauce doesn’t spill over while baking, which I think it sounds like you’re after). Gratz on running a great pizza biz, keep it up!!

It's all about the crust(no sugar and at least 10 to 12 hours in a chiller) and the heat. That's the backbone of a good pizza.
