      You're very welcome. I started doing some vegan recipes for a vegan using the vital wheat gluten. I am using the "seitan" to make Chinese recipes. Some vegan recipes will appear on this channel but most of the Chinese Vegan recipes will appear on my other channel, the Chinese Cooking Channel. Here is a link to a vegan recipe on my other channel. The only difference I would change on my recipes is to steam the seitan, instead of boiling it.     What is the difference between wheat starch and corn starch Dan? Can you substitute the CS for the WS?

      Starches are used as thickeners. Different starches produce different textures. Tapioka starch is another thickener. My mom uses tapioca starch for Chinese cooking and I have used tapioca starch as a thickener for vegan cheese. I like to use cornstarch for thickening gravies, soups and sauces. Some recipes are interchangeable but generally, I think wheat starch, produces lighter texture. Thank you for your question.
