Summertime is salad time this is one of our favorites Panzanella Salad

12 ounces of grape tomatoes on the vine
Three baby cucumbers
Two garlic cloves, grated
Third of a cup of fresh chopped basil
Half loaf of Italian bread, toasted with olive oil and garlic
Half a large, large red onion
Quarter cup of olive oil
Quarter cup of red white vinegar
One can of drains and rinse cannellini beans
Half a pound of fresh mozzarella
Half a cup of shaved Parmesan cheese
Sprinkle of oregano
And of course, salt and pepper taste enjoy
