You can vary the temp between 450 and 625 with ease, depending on deflector plate usage and charcoal load. 3 zones on this beast: Hot zone over the open area of deflector plate, cool zone over closed side of deflector plate and warming when using the rack.
So ridiculous that you have to make disclaimer statements if you dare step out of line with what they think you should do. Even if it was a competition- your meat=your choice.

Apologize for the 5 month delay. GSI table available at Cabela, Bass Pro, Sportmans..... Work well for the Nomad 250.
