    As gujjus this is something that we eat often in winter months. It makes a good dinner option as well.

    For binding use besan(chickpeas flour) in place of atta if you are gluten allergic. use oil greases ziplock sheet to roll paratha on it. It is easy to take out to cook. Thanks for sharing. I watch your recipes almost every day and try many.

      Can I use almond flour. Can't use aloo or channa.

      @@MegaWavesof_888 you can use almond flour, but it do not help with binding. You can make with only bajra flour as well. Just paratha may be little thick.

    just another way to handle bajra atta without adding wheat flour. this technique is called Ukad in Marathi. take a cup of water and boil it with just a pinch of salt in it. when it starts boiling add the bajra flour shut the stove and mix the flour in the boiled water for 2 to 3 mins then close with a lid for 5 mins. then get it on a parath and knead it well for 5 to 10 mins. now add all the masala and veggies. the step of adding the flour to the boiling water makes the atta very managable. no need to add any gluten. i use this technique to make millet rotis. I grind equal quantities of bajra, jowar and ragi in a mixer to a fine powder. then add about 3 to 4 spoons of lightly roasted Rajgira seed powder to this. this flour combination makes your rotis super healthy . can be eaten with absolutely any sabzi or dal. I even make methi muthias with this flour combination. extremely delicious and healthy.

    Tried bajra methi parantha today..followed the recipe ditto except for onions and chillies...excellent result. Everybody loved it and the tomato chutney. Perfect result is the best outcome of following a chef's recipe.👍

    My mum cooks thick Bajra Poori (mixed with jaggery powder and sesame seeds), taste is super yummy and lasts a few days, anytime snack during the winter. I liked the recipe, and I will try it.

    We eat Bajra in Karnataka too. We make porridge (thick) called " mudde" in kannada & eat with special curries like mosaru bajji ( curry with curd) , bassaru ( made of liquid of boiled dal & dill leaves with spices) .
    This recipe we make with rice flour & is known as "thalipeet" . Will try this recipe as it's interesting. But we can use hot water to make the dough binding.

      Bajra is not recommended in diabetic food. Jowar and ragi is advised.

    That is a revelation that Bajra originated from Africa. I was born in Africa. Very nice vlog. Loved this recipe. I would use thin plastic to roll so you do not need to use so much dry atta, Or even make it on a damp cloth using hands. We gujaratis make dhebra same concept which you call paratha. stay connected. I like to cook.

    Nice recipe. In gujarat we call it mehi na dhebra make it specially in winter. If add curd in it becomes more soft.

    Kunalji is parathe ko Gujarati me 'dhebra' kehte hai aur ghee k saath khate hai. Middle Gujarat me 'charotar district' me bahot hi banta hai jaha most of people farming karte hai . Me bhi winter me banati hu . Thank you for sharing recipe. Little different but as always awesome 😍

    Hi chef if we mix with hot water we believe that hot water combines well with bajra more than cold water.we will do roti with that bajra more than parata jst like jawar ka roti banate na like that.But this time will try this
