just another way to handle bajra atta without adding wheat flour. this technique is called Ukad in Marathi. take a cup of water and boil it with just a pinch of salt in it. when it starts boiling add the bajra flour shut the stove and mix the flour in the boiled water for 2 to 3 mins then close with a lid for 5 mins. then get it on a parath and knead it well for 5 to 10 mins. now add all the masala and veggies. the step of adding the flour to the boiling water makes the atta very managable. no need to add any gluten. i use this technique to make millet rotis. I grind equal quantities of bajra, jowar and ragi in a mixer to a fine powder. then add about 3 to 4 spoons of lightly roasted Rajgira seed powder to this. this flour combination makes your rotis super healthy . can be eaten with absolutely any sabzi or dal. I even make methi muthias with this flour combination. extremely delicious and healthy.
Tried bajra methi parantha today..followed the recipe ditto except for onions and chillies...excellent result. Everybody loved it and the tomato chutney. Perfect result is the best outcome of following a chef's recipe.👍 Thank you chef Kunal.
For binding use besan(chickpeas flour) in place of atta if you are gluten allergic. use oil greases ziplock sheet to roll paratha on it. It is easy to take out to cook. Thanks for sharing. I watch your recipes almost every day and try many.

This recipe we make with rice flour & is known as "thalipeet" . Will try this recipe as it's interesting. But we can use hot water to make the dough binding.
My mum cooks thick Bajra Poori (mixed with jaggery powder and sesame seeds), taste is super yummy and lasts a few days, anytime snack during the winter. I liked the recipe, and I will try it.

Bajra is not recommended in diabetic food. Jowar and ragi is advised.
